20.01.2022 This little number is budget friendly, versatile and as always super easy to make. Crustless Quiche - Recipe from our 4 Ingredients + (YIAH) Cookbook Ingredien...ts Serves 6 * 5 eggs, beaten * 1& cups ricotta * 1 onion, chopped * 300g / 10oz frozen spinach, defrosted (squeeze out excess liquid) Preheat oven to 180C / 375F. Line a 20cm / 8-inch quiche dish with baking paper. In a large bowl, combine eggs, ricotta. Stir to combine and set aside for 15 minutes. Sauté the onion in a large nonstick frying pan over a medium high heat until tender, 3 minutes. Add spinach and cook, stirring for 2 minutes. Cool slightly. Then add to egg mixture and stir to combine. Pour the mixture into the prepared dish. Bake for 40 minutes, or until the edge starts to brown and the centre no longer bubbles with moisture. Allow to cool and set before removing from the pan. If entertaining; I would sprinkle with chopped olives, semi-dried tomatoes, mushrooms and Parmesan cheese before baking. This simple and elegant dish is a crustless version of a typical quiche and a great gluten-free option. Of course if you want to add meat, herbs to boost the flavour you can. The base recipe is fabulous and the best part is you can make this recipe your own by adding a little bit of what you like. YIAH TIP: You can add 1 tablespoon of YIAH Herb and Garlic Dip. YIAH Classic Olde World Herb & Garlic Dip Mix is a pantry staple. Sprinkle it over potatoes before roasting, or into a little sour cream then use it to top a Jacket Potato filled with Chilli Con Carne see page 83. Or one of my winter favourites; Simple Chicken Soup: Into a saucepan add left over shredded roast chicken + cup each of chopped carrot, onion, celery, red capsicum + 3 cups (750ml) salt-reduced chicken stock + 2 tbsp. YIAH Classic Olde World Herb & Garlic Dip Mix (or 2 tbsp. YIAH Mediterranean Risotto Blend). Bring to a gentle boil and simmer for 30 minutes.
