25.01.2022 Veggies for breakfast this butternut pumpkin loaf was made with avocado almond meal and eggs... simple and easy and a way to drop some wheat and gain some veg. All eggs were sourced from free happy chickens who eat kitchen scraps and worms , and snails , slaters and caterpillars... and enjoy a cuddle.

12.01.2022 OMG its healthy So my protein chocolate nut bar set- sooo yummy. Recipe is pretty flexible so here goes- #freerecipes #veganchocolate 100g coconut oil 100g cacao butter 80g cacao powder 80g each sunflower seeds, pumpkin seeds, pitted dates, walnuts, linseeds... 40g each of chia seeds, maca powder I use agave to sweeten 50g- but a fine xylitol/ erythirtol or stevia to taste would work to taste. Melt the butter and oil together set aside. Grind remaining ingredients until courses ground. Mix the wet and dry ingredients and place in lined tin or dish. I have to visit the farm to be able to enjoy it fully- mixed with these green figs, fresh from my tree is a simple, delicious summer lunch- tossed in Omega rich walnut oil, with additional crunchy walnuts with sweet soft dogs and the salty blue.. Oh my i@lo e salad days!

This Easters recipe is running a little behind schedule (thanks homeschooling) - look out for Spelt Hot cross buns with homemade candied orange and choc bits later today. So here is my cheats healthy dairy, refined sugar and gluten free 2015 version...... Just in time for Easter!! Healthy Hot Cross Buns YUM. This #HotCross #glutenfree #superfood #Buns recipe, made for our #IamFoods Chocorama Easter class, last Sunday were such a hit. If gluten laden foods arent your friend, and smelling delicious fresh buns at the bakery has got you sad/sorely tempted/conflicted. .........you can still get some soft bouncy hot cross buns in. Now because I didnt want a recipe list as long as this page, and to make it easier I used a blend. MY TIP...look for a flour mix that says to add yeast, you need it for the flavour as well..avoid the cake mix style gluten free flours they are too soft to make rolls (or even mounds...) You can omit the egg for a vegan recipe if you wish, but add 10g extra oil and 1tbsp ground chia instead (you are giving away some texture though with this choice). Finally as a holiday recipe I wont go into "whats in it for us" nutritionally (as I usually do), but I will say Superfooded GF Hot Cross Buns are good for the soul :) (and tummy). 500g gluten-free pizza/ bread mix mix (we used Oragan) 10g salt 70g coconut oil 250g almond milk 70g coconut sugar 1 tbsp yeast 1 lemon, zest only* 1 orange, zest only* 1-2 tsp cinnamon* 1 tsp nutmeg tsp ground clove 1 egg 100g sultanas 40g goji berries 40g cranberries 40g inca berries Cross mixture 80g gluten free flour 60-80g water 20g oil Preheat oven to 170C. Place the coconut oil, almond milk salt, sugar, zest and spices over a low flame until just warm. (Thermomix 3 mins/37C/speed 2) Ensure the milk is blood temperature and add flour and yeast together. Knead to a ball and work for two minutes. (Thermomix 10 sec/speed 6, then, 2min/Interval speed). Place into a well grease bowl to rise and double in size. Split the dough into 9 equal portions and dollop or form into a bread roll sized portion placing them close together on the baking tray. Use cross mixture to make crosses on buns. Allow to rise a further 10 minutes then bake on 170C for 15-18 minutes or until golden and firm. Brush with agave syrup while hot. Tips You can also place chocolate coated cacao nibs in for a bit of chocolate crunch

09.01.2022 COULDNT FIND FLOUR Get inventive! My chocolate chickpea cake from 2013 its #glutenfree to! #chocolatecakerecipe Chick Pea & Chocolate Cake (gluten & dairy free)... This delicious moist chocky cake is a scrumptious chocolate fix. (Its healthy but dont tell anyone til you have eaten half the cake yourself.) 400g tin chickpeas (drained and rinsed) 80g strong black coffee 50g dark chocolate pieces 1 tsp vanilla extract 270g honey 40g cocoa powder 4 eggs 2 tsp baking powder (gluten free) 1 tsp bicarbonate of soda icing sugar to sprinkle (optional) Preheat oven to 180C. Line a 20cm round spring-form tin with baking paper. Place chickpeas, coffee and chocolate into food processor and mix on a medium speed until it forms a course paste. (Thermomix 10secs/speed 6). Scrape down sides of the mixing bowl. Add vanilla, honey, cocoa, eggs, baking powder and bicarb. Blend on a medium speed until incorporated well. (Thermomix 15secs/speed 5.) The mixture is very liquid (dont panic!) pour into prepared tin and place in the oven for 40-50 mins or until it springs back in the centre when pressed. Remove from oven and tin, allow to cool on a cake rack. Dust with cocoa powder or icing sugar and serve. Tip - place foil on the top of cake halfway through baking to prevent browning, and choose dairy free dark chocolate if you prefer.

03.01.2022 Chocolate is my boyfriend Cleansing on Valentines Day means creative ways to get your chocolate on, smooth creamy coconut and almond yoghurt are my base for this two toned marriage of berries and cacao. I played with the levels of each, according to craving lets see which one makes me swoon . Place 250g STRAWBERRIES with 250g VANILLA ALMOND YOGHURT blend with a dash of MONKFRUIT or AGAVE, you want the berries to burst with sweetness to counteract the bitter chocol...ate. Blend until smooth. Add 80g CHIA SEEDS. Pour in the glass. Halfway Done 250g thick COCONUT YOGHURT and 40g CACAO POWDER go into the blender now with 40g maple syrup and a teaspoon of VANILLA EXTRACT, add the 50g Chia seeds and blend until combined. Now layer. refrigerate for an hour or more. Decorate with fruit and enjoy straight out of the glass... or smothered places.... #valentinesdessert #veganvalentine #healthydesserts See more
