Buckwheat groats, puffed quinoa, dessicated coconut, chopped almonds mixed with raw cacao, coconut oil, honey and tahini. I make my rice pudding with just rice and full cream milk. (Also delicious with plant based milk like coconut milk). Sometimes I add cinnamon or sometimes lemon zest. No sugar added. 21.01.2022 Sunday lunch! Teriyaki Salmon with brown rice noodles and broccoli! This is a family favourite and so easy to make. I think the original recipe came from @donna.hay 600 g salmon 1/4 cup soy sauce... 1/4 cup maple syrup 1 large garlic clove, thinly sliced 1 tbp grated fresh ginger Preheat the oven to 180C. In a small pan, heat the soy sauce, maple syrup, garlic and ginger until it begins to simmer. Don't boil! Grease an over dish with a 1 teaspoon olive oil. Place the salmon in the dish and pour the teriyaki mixture over the fish. Bake in the oven for minimum 10 mins to max 20 mins. If you like your fish just cooked then go for 10 mins but if you like your fish cooked through, go for 20 mins. Serve with your favourite sides. 15.01.2022 5 minute noodles! Way tastier and way better for you than the 2 minute packaged versions! Ingredients (for 2 lovely people) 125 grams brown rice noodles Homemade flavour (mix together 3 tbs soy sauce, 1 tbs sesame oil, 1 tsp garlic powder, pinch or more of chilli, 2 tsp grated ginger or 1 tsp ginger powder)... 2 cups of sliced cabbage 50 grams thinly sliced cooked beef Layer in 2 bowls or glass jars - flavour, then noodles, then cabbage and meat. Boil the kettle, and top the mixture with boiling water. Wait 2 minutes, stir and enjoy! This is a great lunch box idea as well. Just layer into a glass jar, keep in fridge, add hot water! You can use any flavour, protein and veggie combo that you like. Add fresh herbs if you have some. Cooked chicken and broccoli is great. Salmon and broccoli also delicious. Be brave, experiment!

14.01.2022 Cherry Tart! Cherries are in season in The Netherlands right now and they are delicious! These magnificent cherries are grown just down the road and made the most delicious tart for a Sunday family gathering! The base is super simple and I use it as the base for any type of fruit - 100 grams soft butter mixed with 6 tbs caster sugar. Add 2 eggs and mix together before adding 6 tbs almond meal. Continue to mix and now add in 1 tsp baking powder and brown rice flour until it f...orms a dough. Press into a lined spring form. Spread the base with a thin layer of jam or apple sauce before topping with seasonal fruit. We had a fig tree near the water tank and no matter if we had drought or plenty of rain it would produce an abundance of gorgeous fruit. Home cooked soups with loads of vegetables and bone broth are a great way to nourish your body (and your immune system). 06.01.2022 Getting my bake on. Its back to school and uni for my young adults next week (note Im not allowed to call them children anymore)! Choc Chip and Oats Cookies! 1/2 cup extra virgin olive oil... 1/2 cup brown sugar 1 free range egg 1 teaspoon vanilla extract Pinch sea salt 1 cup buckwheat flour 1/2 cup rolled oats (I used a GF brand) 1/2 teaspoon baking powder 100g dark chocolate, chopped Heat oven to 180C and line a baking tray. Whisk egg, olive oil, sugar, vanilla and salt fir a couple of minutes. Add flour, baking powder and oats. Mix together. Add chic chips. Spoon generous teaspoons of mixture on to the tray and bake for about 15 mins. 06.01.2022 Slow Saturday morning = sleep in and wake without alarm and cherry and buckwheat porridge. This buckwheat porridge is a favourite of mine. Its a great alternative to processed cereals, packed with goodness and gluten free. Soak 1/2 cup buckwheat groats in water overnight. Rinse and add to blender with 1 tbs of water, 1 tsp maple syrup, 1 tbs crushed linseeds, 1 tsp chia seeds and 1/4 cup of fruit (berries are great, cherries also, bananas) and blend. 03.01.2022 Chocolate Coconut Slice is currently the favourite snack in my house. The kids pack it in their lunch boxes for school and uni. This version (there are many) of mine uses teff flour and some chia seeds to boost the protein content. Teff is a gluten free grain, traditionally from Ethiopia. It's highly nutritious and a great source of protein, fibre and minerals like iron, calcium and magnesium. ... Here's my recipe Slice 150 gram butter, melted 1/2 cup brown sugar 2 tbs raw cacao powder 1 cup teff flour 1/2 cup GF oats 1 tbs chia seeds 1 cup dessicated coconut 1 tsp baking powder Icing 1tbs raw cacao 2 tbs coconut oil 1 tbs maple syrup 1tsp milk, of choice 2 tbs dessicated coconut Preheat oven to 180C. Mix melted butter and sugar in a bowl. Add dry ingredients and mix well. Press firmly into a lined square tin and bake for 15 to 18 mins. Once cooled, chill in fridge for 10 mins before icing. For icing mix together ingredients in a small bowl and ice the slice. Sprinkle with extra coconut. Place in freezer for 30 mins before removing from tin and slicing.
