24.01.2022 bush tea I use this ‘medicine pot’ to make herbal and medicinal teas throughout the winter months. This particular one is Lemongrass & Ginger. I gather herbs and lemongrass from the garden, wind it together, place in the pot, and then boil it on the stove.... 1 handful of green lemongrass fronds 4-5 slices of ginger root a large bunch of fresh picked mint Bring the water to a boil with the ginger slices, then add the lemongrass and mint leaves, cover, turn the fire off, and let it steep. In the Caribbean this classic bush tea is served with a splash of milk.

03.01.2022 I started reading labels in my 20s when I found out the crab sticks I bought for my favourite stir fry recipe were actually not even crab but some fish that had been processed and died to look like crab. It really freaked me out because I truly believed I was eating crab. The next shock came with the grated Parmesan cheese in the dry foods and pasta section. cellulose? When I found out it was essentially sawdust I became hooked on label reading. My whole approach to ea...ting shifted. As far as I could make possible I vowed to make the effort to eat the real thing. No numbers, no long complicated vocabulary words that had to be researched in chemistry books. It became a crusade to ditch the synthetics and fillers, emulsifiers and stabilisers. My taste buds woke up. My eye for beautiful raw ingredients sharpened and my kitchen became a place of experimentation. As I progressed along the path of learning how to cook from scratch rather than packets I learned how to ask better questions. When I came upon some unusual fruit or vegetable (back then things like Kiwi were new and unusual) I brought one home and cut it open. I also started collecting edibles,mostly herbs, as they gave quick results for flavour and were easy and rewarding to grow. I guess the point I’m making is fresh is better than fake and if there is more than 5 things in the ingredients I think you can make it yourself. Give it a try. See more
