09.01.2022 True allergies to fruits and vegetables (like tomatoes) are rare, affecting only about 3% of the population Although, Food Chemical Intolerance to the naturally occurring food chemicals in them, are much more common! Salicylates are chemicals that help protect plants against insects and disease. They are usually concentrated under the skin, and decrease with ripening.... Amines are chemicals that are the result of the break down of proteins and the food ages or ripens. They also increase when foods are browned, grilled or charred when cooked. Glutamates are amino acids naturally found in many foods, where they are bound to proteins so they are absorbed slowly. But, they also added as a flavour enhancer in a much more concentrated form (e.g. MSG), which can trigger ongoing reactions. Histamine is possibly the best known amine, as it's produced by the body naturally during an allergic reaction, but can also be present in food itself or the food can mediate the release of histamine (tomatoes fall into both of those categories!) 09.01.2022 Identifying food intolerances to naturally occurring food chemicals can certainly feel like guess work! There are 3 main reasons for this - 1. We have our own individual tolerance thresholds for food chemicals, and only experience symptom flare-ups when we surpass this threshold 2. Food intolerance symptoms can appear anywhere within 2-48 hours after consumption... 3. These food chemicals are so prevalent in a wide range of foods, so if you are reacting to more than one, good luck! The gold standard approach for diagnosing food intolerances is an strict elimination diet for 6-8 weeks, then to slowly re-introduce foods to see which ones cause a reaction. Firstly, who's got time for that?! Secondly, then what?! Elimination diets are simply too restrictive to follow long-term.
