22.01.2022 Pesto Pasta is a delicious quick and easy recipe! Ingredients: Salted Water Bow tie pasta (aka Farfalle)... Pesto Chopped fresh basil Baby tomatoes - raw or roasted 2 tbs toasted pine nuts Cook pasta according to package instructions, in salted water. Drain and transfer warm pasta to a serving dish. Add pesto sauce and stir into pasta until evenly distributed. Sprinkle with toasted pine nuts! Add tomatoes and fresh basil if desired. 11.01.2022 Bok Choy Recipe Bok Choy can be prepared in many ways but this quick stir-fry with garlic and ginger is my favourite. Less than 10 minutes and you’ll have a great side dish that’s full of nutrients and anti-inflammatory health benefits. 2 tbsp (avocado) oil... 4 baby bok choy, sliced in half 1 tsp minced ginger 2 garlic cloves, minced 2 tbsp water salt and pepper Heat oil in a wok or pan and add the minced garlic and ginger. Stir for 30 seconds, then add the bok choy. Toss and stir-fry for 2 minutes. Pour two tablespoons of water (or broth) into the pan, cover with a lid and cook for 2 another 2 minutes. 11.01.2022 Sticky Eggplant with Miso 2 tbsp olive oil 2 eggplants 1/2 cup miso paste... 80ml mirin 2 tbsp brown or coconut sugar 2 tbsp sake white sesame seeds (optional) Preheat oven to 220C and line a baking tray with baking paper. Rub with olive oil and place flesh side down on the tray. Bake for 20min until golden. Combine miso paste, sugar, sake and mirin in a saucepan over low heat. Stir and cook for 1-2min. When eggplant is cooked, turn it over and brush the mixture on the flesh. Return to oven and bake for another 5-8min until caramelised. Sprinkle with sesame seeds (optional). 07.01.2022 Homemade Pesto Sauce 2 cups basil cup toasted pine nuts toasted 4-5 tbs olive oil 1 tsp lemon juice... 1 tbs minced garlic tsp salt tsp pepper Heat pine nuts in a small sauté pan over medium heat, stir once you notice them starting to brown and remove from heat once all nuts are roasted and let them cool. Put olive oil and basil leaves into a blender and blend until the ingredients are combined but not totally smooth. Add cup pine nuts, garlic, lemon juice, salt and pepper and blend to your desired consistency.
