Yet another spectacular recipe from the amazing @counting_zacros I’d actually never tasted Biscoff until a week ago! It looked so delicious I was afraid to buy it in case I’d lose control and eat the whole jar (which I’m glad to say I haven’t done even though I was transported into far off realm of taste amazement when I first tried it) These muffins are spectacularly light and fluffy, they’re seriously the perfect texture and I’m seriously not not just saying that! Now pair that muffin with a cheesecake, biscoff flavoured glaze, and jeeeeee-suz, all I can say is when you make these, your tastebuds are in for one mighty delicious ride This recipe is really ridiculously easy too, even my 18 month old could make them! Definitely save and make these asap INGREDIENTS Donuts - 30g vanilla or white chocolate whey (I used @myproteinau vanilla) - 30g flour (I used gluten free as that’s all I had in the cupboard) - 30-40g powdered sweetener (I used @naturally_sweet_asutralia monk fruit sugar) - 1 egg - 40g egg whites (I used @pureggandlifeplus) - 135g Greek yogurt (the original recipe called for apple sauce but I didn’t have any so Greek yogurt it was and it worked magically) Glaze/frosting - 20g low fat cream cheese (I used @phillyaus) - 15g Biscoff - 15g vanilla whey (I used @myproteinau vanilla) - 10ml almond milk - 5g powdered sweetener (I used @naturally_sweet_asutralia monk fruit sugar) DIRECTIONS - Preheat oven to 180C - Sift dry ingredients into a bowl, then add your wet ingredients and whisk together - Coat some muffin pans or doughnut pans with non-stick spray and pour mixture in. My mixture made 6 muffins. - Bake for about 12-15 minutes - Remove from the oven and allow to cool while making your glaze. - To make the glaze, thoroughly mix all the glaze ingredients together. - Dip hot muffins into the mixture, or let your muffins cool completely and spread glaze on with a knife. 23.01.2022 Banana and Chocolate is always a winning combination!! #Repost @nutritionn.editionn with @get_repost CHOC BANANA SCROLLS - Coming at you with a little twist on the typical cinnamon scroll and let me say, they are good!!! PLUS, for only 200cals per scroll, no need to feel guilty stopping at 1 ... - - CHOC BANANA SCROLLS. Dough: * 1 cup original @sogoodau almond milk * 2 tbsp Nuttelex * 1 satchet yeast instant * Sprink salt * 1 tbsp sweetener or sugar of choice. I used @naturally_sweet_australia * 1/2 cup Apple sauce * Whole meal flour: start with 2.5 cups and add gradually by the tbsp afterwards. (I used about 445g) Filling: * 1.5 mashed banana * 1 tbsp sweetener (I used @naturally_sweet_australia) * Handful chopped chocolate buttons or choc chips Icing: * 1/2 cup light cream cheese * 2 tbsp yoghurt * 2 tbsp maple syrup * 2 tsp cacao powder * 1 tsp vanilla extract * 1 tsp sweetener/sugar - METHOD 1. In a mixing bowl add butter and almond milk and heat in microwave until butter has melted and it is luke warm 2. Sprinkle over yeast, sugar and salt and allow to sit for 5-10 mins. Then add in Apple sauce and stir. 3. Gradually add 2.5 cups of flour, 0.5 cups at a time then begin to add by the tablespoon afterwards until the dough becomes sticky and hard to stir. Kneed into a ball then allow to sit for 40-60 mins covered in a bowl until it doubles in size. 4. While dough is rising, mash 1.5 bananas and mix in sugar. Roughly chop chocolate 5. Roll out dough into a rectangle on a lightly floured surface. (Optional: spray the rectangle with some cooking spray) evenly distribute banana mixture on top, leaving some room for the edges and sprinkle choc over top. Roll up into a cylinder then cut into rolls using floss or a good knife. 6. Bake for 35-40 mins at 180. While cooking combing all icing ingredients with an electric or hand beater and pour over warm scrolls when done - MACROS per scroll: 202Cals 7P:32C:9F (Makes 9)

Butttttt this didn’t turn out to be the sort of chewy cookie texture I love, more like a cookie cake . Was still super yum and of course Dan and I ate the whole thing . ... . I wasn’t going to share this one but you guys voted for the cookie cake skillet so please be warned if you prefer a chewy cookie texture (like me) then you’re gonna have to wait for the tweaked recipe BUT if you’re down for a chocolate chip cookie cake then get baking on this straight away . . It’s quite large so I would say serves 2 and can totally be made ahead of time and stored but can always be made on the fly for those after dinner moments when you’re like hey I really feel like a giant chocolate chip cookie cake . . RECIPE: 1 egg 1/4 cup Apple puree/sauce 30g nut butter, I used @melrosehealth almond butter. 1 scoop vegan vanilla protein @happywayau code HAPPYBLONDE 4 tbsp almond meal 3 tbsp stevia or sugar of choice @naturally_sweet_australia code BLONDE10 Pinch of salt Optional: a dash of ground cinnamon. 3-4 squares @lindt_australia chocolate **I use no added sugar apple puree. SPC brand sold in a pack of 4 x tubs in the supermarket. . METHOD: - Preheat oven to 175C. - Whisk egg, apple sauce and nut butter. - Add stevia, protein, almond meal and salt. - Fold through chocolate pieces but be sure to leave some aside for topping. - Transfer to mini skillet or a lined baking tray/dish. - Top with remaining choccie pieces. - Bake for 15-20minutes. - Allow to cool for 20-30minutes as it will be piping hot when you remove from the oven . Hit save so you can make these delicious little protein bites whenever you have 15 minutes to spare . This has to be one of the easiest recipes I have created . No baking, no heating just roll, fridge, eat, repeat .... RECIPE: 1/4 cup apple sauce/puree 3 tbsp vegan vanilla protein powder @happywayau code: HAPPYBLONDE 1 tbsp stevia @naturally_sweet_australia code: BLONDE10 1 tsp cinnamon 3 tbsp coconut flour 2 tbsp/40g smooth almond or peanut butter (I use tend to use almond butter for this recipe) INSTRUCTIONS Combine all ingredients and roll into 6 balls. Combine extra 1 tbsp stevia with 1/3 tsp cinnamon in a small bowl. Roll each ball in the cinnamon sugar mix and store in the fridge for up to one week . Recipe makes 6 balls, double to make 12 because they won’t last long!

These are soooo soft and moist (sorry if you hate that word but it’s the best way to describe them bahaha) and really hit the spot when you’re craving something sweet! Shoutout to @run2food for the inspo - her banana crumble muffins looked soooo amazing, I had to try her recipe but with a chocolatey twist! ... Ingredients: 2 cups gluten free self-raising flour 1/4 cup vegan chocolate protein powder (I used @macr0mike) 3/4 cup coconut sugar @naturally_sweet_australia 3 teaspoons of pure cocoa powder Wet: 4 ripe medium bananas 1/3 cup coconut oil, melted @naturalrawc 1 teaspoon vanilla extract Icing: I used the @180cakes vanilla icing mix with purple acai powder for the colouring, topped with halves of @purabon chocolate brownie balls! METHOD: 1. Preheat the oven to 175 degrees Celsius, fan-forced. 2. In a large bowl, mix together all the dry ingredients for the muffin. 3. Add all the wet ingredients into a blender and blend until smooth. Pour the wet mixture into the dry mix and gently fold until no flour remains. Do not overmix 4. Divide the muffin batter evenly between 10 muffin holes. 5. Bake 15-20 mins at 175 degrees 6. Allow the muffins to cool slightly between removing from mould

20.01.2022 Meet our newest best friends Repost from @getyayumon Now those who know me well know that I'm no pastry chef however apart from the uneven piping (don't look too closely!) these OH MY MY - super mouth watering chocolate mousse cake delights didn't turn out too bad - best part is they were so blimmin easy to make! Recipe below!... Cake: 1. Make the decadent chocolate mix as per instructions 2. Slice into 3-4 slices 4. Top with either sugar free jam or I zapped a few frozen raspberries and added some powdered erythritol (so yum) or use @thenourishedchef raspberry jam (so yum) Chocolate Mousse: 1. Mix together: 85gm softened cream cheese, 1/2 cup whipping cream , 1 tsp vanilla, 2 TBSP cocoa (I used dark chocolate instead) , 1/4 cup powdered erythritol (I get mine from @naturally_sweet_australia) 2. Beat together and put in fridge until set - pipe onto cake I'm into quick and easy baking but if you have a bit more time you can tart this up by making it into a fancy parfait! Enjoy! X

Are we surprised that I’m making another weetbix recipe ??? I don’t think so anyway I can use weetbix I’m innn And these were so easy and so delicious !! - - INGREDIENTS: * 3 crushed @weetbixau * 1 cup wholemeal flour * 1/2 tsp baking soda * 1/2 cup mashed banana * 1/2 cup sugar of choice. I used stevia from @naturally_sweet_australia * 1 tsp vanilla essence * 1 tbsp maple syrup * Handful choc chips (I used @noshufoods) - - METHOD: 1. In a bowl, whisk together mashed banana, sugar, vanilla, maple syrup and baking soda 2. Gently fold in crushed weetbix and flour until just combined. 3. This recipe is: Vegan Protein packed Gluten free Dairy free Refined sugar free INGREDIENTS: 100g of pure coconut cream (the thicccckkk part) @ayam_australia 50-100g of strawberries, frozen or fresh 50g of vegan white chocolate, melted 2 tbsp of @macr0mike jam drop protein powder (about 25g) Sweetener of choice, I used liquid @naturally_sweet_australia coconut stevia drops Method: Pop everything into a blender or food processor and blitz everything up until smooth. I eat them nearly every day for breakfast and they are great in baking too... INGREDIENTS: 1 1/2 cup self raising flour 6 WeetBix (crushed)@weetbixau 1 tsp cinnamon 1 tsp baking powder 1/4 sweetener (I used stevia) @naturally_sweet_australia 1/4 coconut oil 1 cup almond milk @almondbreezeaus 2 eggs 3/4 cup blueberries METHOD: 1. Mix together crushed weetbix, flour, cinnamon, baking powder and sweetener of choice 2. Add in melted coconut oil, eggs and almond milk. Mix altogether 3. Fold through the blueberries 4. Add into a baking pan and bake for 45 minutes at 180c or until golden brown 5. 16.01.2022 Thankfully this recipe drops in time for back to school lunchbox baking! Repost from @pepperskitchen.au PEANUT AND BANANA CHOCOLATE CHIP LOAF I baked this the other week and I promised to post it later & then I did what I always do and forgot!!... So here you have it Peanut Butter, Banana & Chocolate in a loaf. Don’t fret if you don’t have a thermomix or a loaf pan, solutions down the bottom. Now what else am I forgetting? Tell me the most forgetful thing you’ve done? INGREDIENTS 2 ripe bananas 20g flaxseed meal 400g milk of choice 300g plain flour 15g baking powder tsp bi carb soda tsp organic stevia extract powder or another sweetener 140g peanut butter 150g dark chocolate melts, plus extra for top METHOD Begin by heating your oven to 180c, prepare your loaf pan with butter/nuttelex or use reusable baking paper. Set aside. Peel and add bananas to your bowl, blend for 1sec / sp4, then add flaxseed meal, peanut butter and milk and blend for 10sec / sp3. Add flour, baking soda, bicarb and sweetener blend for 5sec / sp6 Add chocolate melts and blend 3sec / sp6 or until they are broken up but still chunky. If using chocolate chips simply skip this step and mix them through the batter. Pour into prepared loaf tin, top the batter with more chocolate and bake for 35-40 minutes or until cooked. Allow to cool for 10 minutes in tin, then turn out onto wire rack and cool completely. No Thermomix?? Don’t stress, simply follow my muffin recipe PEANUT BUTTER BANANA MUFFINS WITH CHOC-CHIPS recipe and increase cooking time. No loaf pan? No problem! Just make into muffins and decrease cooking time to 20 minutes. Tag a friend who loves PB as much as me Save for later and enjoy. Anna x

One night I had a random idea for this - I wanted to make a ‘cheesecake’ that is low calorie, gluten free, refined sugar free, and overall much lighter than a regular ‘cheesecake.’ So here we are! ‘Cheesecake’ mix:... 1/4 cup of pure coconut (or vanilla) yogurt @coyo_organic 1/4 cup of pure coconut cream (the thickkkk part) @ayamaustralia 2 tbsp of coconut sugar @naturally_sweet_australia Peach layer: Ya guessed it, slices of peach! I probably used about 100g but just eye ball how much you’d like Buttery cheesecake base: 1/4 cup almond meal @thealmondfarmer 1/4 cup oats 1 heaped tbsp of vegan/dairy free or regular salt reduced butter Serves: 2 mini cups or one large, pictured One small cup is about 200kcals compared to the regular 450+

In a bowl mash the banana, add the flaxseed meal and milk - mix well. Add flour, baking powder, bi carb, sugar (if using) and mix until well combined, then stir through the chocolate chips. If you haven’t made this perfectly chewy GIANT chocolate chip cookie yet what are you waiting for? This is a single serve recipe but you can split the dough into two if you’re feeling generous .... RECIPE: 2 tsp smooth runny nut butter (20g) 5g coconut oil @niulife 2.5 tsp apple sauce/puree (25g) 3 tbsp almond meal 2 tbsp vegan vanilla protein @happywayau code: HAPPYBLONDE 2 tbsp coconut sugar or stevia/monk fruit @naturally_sweet_australia code: BLONDE10 Pinch of pink salt 1.5-2 squares 70% or 85% dark chocolate @lindt_australia **I use solid coconut oil and SPC brand no added sugar apple puree, sold in a pack of 4 x little tubs in the supermarket. INSTRUCTIONS: Preheat oven to 180C. Melt coconut oil and nut butter together in microwave. Add apple puree and coconut sugar/stevia, stir until smooth. Add almond meal, protein powder and salt. Mix until combined. Break up chocolate, be sure to set aside a couple of pieces before folding through the mix. If you’re dough is a bit too sticky, place in the fridge for 10-15 minutes while you clean up. Transfer to mini skillet and spread to the edges OR place on a lined baking sheet in a round cookie shape. Top with remaining chocolate pieces. Bake for 10-12 minutes. Remove from oven and allow to cool for 15-20 minutes before eating. This allows the cookie to solid up enough so that you can pick it up but it will still have a gooey/chewy centre. The egg-whites make for a really creamy mixture and the zucchini helps to bulk out the oats - bc I'm all about a BIG Bowl of oats!! For extra thick oats mix up your oats and milk (or water) and refrigerate overnight in an airtight jar/container.... Dets 40g @gfoats (4sp) 1 cup @almondbreezeaus unsweetened almond milk (1sp) 80ml egg-whites (0sp) 3/4 cup grated fresh zucchini (0sp) 2tsp Naturally Sweet Monkfruit Sweetner (0sp) 2tsp cacao powder (0sp) 1tsp white chia seeds (0sp) 1tsp ground cinnamon (0sp) Mix oats and 1/2 cup almond milk together and refrigerate overnight in an airtight jar or container. Base 1 1/2 cups almond flour 2-3 tbsp monk fruit sweetener @naturally_sweet_australia A pinch of salt 60g cup salt reduced butter, melted Filling 100g low carb white chocolate Juice from half a medium lime One ripe avocado, mashed 1 tsp pure vanilla extract 250g low carb/light cream cheese 1-2 tbsp @raymeeofficial ‘beautiful belly’ in the lime cordial flavour Optional: 2 tbsp granulated sweetener of choice (monk fruit, stevia etc) Optional: top with more of the base mixture as a crumbly finish. 1. In a medium bowl, whisk together almond flour, sweetener, and salt. Stir in melted butter until dough comes together and resembles coarse crumbs. 2. Press into a lined baking tray and bake in the oven (180 degrees) for 10 mins or until slightly golden. 3. For the filling, pop all ingredients into a mixing bowl and mix well until combined/smooth. 4. Optional: you can seperate this mix into two bowls, leaving one as is and adding a couple of drops of natural green food dye to the other to create the layered effect. 5. Once the base is cooled completely, add your filling to the base and freeze for at least two hours, or overnight. 6. Chop into bars and enjoy! Keep refrigerated/frozen. Per serve: About 250 calories 9g carbs 7g protein 14g fat 3g sugar

Look for stevia, xylitol, erythritol or monk fruit blend. Stay away from saccharin, aspartame, Sucralose and similar artificial sweeteners. Until you get to know them, take the time to look up the number that is listed in the ingredients. This yoghurt was listed as sugar free and healthy, but with sweetener 955, how can it be?! Research which sweetener is right by you and make sure it’s natural!

I also highly recommend making the ‘cream cheese’ icing as it brings them to a whole new level INGREDIENTS: 1 cup rolled oats @uncletobys 1/2 cup flour 1/4 cup protein powder @bulknutrients 1 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp ginger 1 cup apple sauce 1 cup carrot (grated) Cream cheese icing: 2 tbsp yoghurt @chobaniau 1 tbsp protein powder 1 tsp stevia @naturally_sweet_australia METHOD: 1. In a bowl mix together oats, flour, protein powder, ginger, cinnamon and nutmeg 2. Add in the apple sauce and mix until it forms a sticky cookie dough texture 3. Grate and fold through the carrot 4.
