08.01.2022 Winter soup; if youre feeling the winter chills make some soup this weekend. Whats your favorite? Heres a basic hearty broth to scare off the winter bugs: Ingredients 1 kilo meaty beef/chicken soup bones (eg beef shanks or short ribs) 8 cups water... 6 whole peppercorns 1/2 teaspoons salt, 2 chopped garlic cloves 1 cup chopped carrots 1 cup chopped turnips/parsnips 1 cup chopped celery 1 cup chopped onion 1/4 cup medium pearl barley/ brown rice Directions 1 In a large saucepan, combine soup bones, water, peppercorns, garlic and salt. Cover and simmer for 2-1/2 hours or until the meat comes easily off the bones. 2 Remove bones. Strain broth; cool and chill. Skim off fat. Remove meat from bones; dice and return to broth along with remaining ingredients. Bring to a boil. Reduce heat; cover and simmer about 1 hour or until vegetables and barley/brown rice are tender.
