25.01.2022 Did you know all our wood is hand split? We don't have any fancy machines to split our wood into chunks Best thing about it, is we can split into a variety of sizes to suit your bbq.... As the name suggests this rub has been developed during covid lock down. Lots of work and testing done in a short space of time by a couple Australian competition bbq legends. Then I'll maintain a small fire at the back throughout the cook. Similar principles to an offset. Fire one end, meat in the middle and heat and smoke tickling it for hours Let's see how I go! So much fun at Home & Hose Mitre 10 today Kyle from Rub & Grub, Tom and Matt from Smoky Pastures BBQ, Tony from DICKBUNS and ourselves had a great day smoking up some chicken wings, porcetta and 2 ripper Tomahawk steaks!... 16.01.2022 Hey guys. Here we are on the Fleurieu Peninsula processing some cherry wood. Short behind the scenes vid showing one part of the process from getting your cherry from the orchard and into a bag.... We like to learn how other business go about doing their thing, so hopefully you find this interesting too. Cherry is a fairly light wood, and doesn't often come in large limbs, so it takes a lot of time to gather enough quantity to be able to send it all over Australia. Thanks for the support. It's what motivates us to get out on a sunday and keep swinging the axe.

14.01.2022 Here it is! Lamb lockdown from Smoke Chamber BBQ Tastes really nice on the finger! Good salt pepper balance, good granular size. Sumac is prominent and there's plenty of those herbs you expect from a lamb seasoning.... They are small though, so it doesn't taste like your eating sticks. Can't wait to cook with it! 14.01.2022 BRAHMAN HUMP PASTRAMI 80 grams of Dr Jay’s Genuine Article in 1 litre of water - injected and soaked for 5 days (bit longer than planned) Taken out of the cure, rinsed and seasoned with Smoky Pastures BBQ risk it.... Smoked in the kettle Olive Pip Co. Bourbon barrel Method 205f - cheeky slice tested In the fridge overnight and sliced this morning. Really happy with how this went. Definately have a go yourselves!

13.01.2022 The girls and I had a really interesting tour of Austral Meat yesterday. We love learning about other businesses, how they go about things. We got a tour out the back of the shop and saw all the machines that are used to bring all sorts of products together for not only the shop, but heaps of other places.... Restaraunts, other butcher shops and many other retail outlets all over Australia. Had a great chat with Katie and Duane, in particular about the significant increase in demand for not only low and slow style cuts but premium lines from all over Australia, many of them being from South Aus. Checked out the dry aging fridge, wow! It was huge! Had a blast...significant works happing in the background so things to look forward to with the shop. The Brothers in Que have some master-classes planned at Australs as well. Definately head to them if you can! Check out the video in the comments too

03.01.2022 Yesterday's Five Founders beef from The Butchers Secret Angle Vale shorties went really well. Smoke in the UDS over Olive Pip Co. And a new wood we are trialling called myall. Awe used new rub in the works by Smoky Pastures BBQ - it is a 'white rub'... Some of the tastiest shorties we've done. Girls also loved it as the rub has NO pepper. Taken til 205f internal - probing nicely. Served with roasted corn, Smoked cauli (which we stuffed - will have to do it again ) gems, and Yorkshire puds and gravy Question is - did we ruin a good shortie by smothering it in gravy???

01.01.2022 The Smoky Pastures BBQ boys knocked these beef shorties out of the park. We have a bit of a running joke with them as they think they are a bit overrated.... I think they've just changed their own minds 9 hour slow cooked beef short ribs in the Weber kettle, using the snake method. (they have a you tube video showing how to set this up) ...
