25.01.2022 As a busy working Mum I love one pot dinners. Less fuss and of course less washing up! This one was gobbled up by my kids very quickly! Ingredients: 2 tbsp olive oil 3 garlic cloves (crushed)... 2 tbsp dried mixed herbs 1 eggplant/aubergine (take seeds out and chop into small cubes) 1 large carrot (chopped into small cubes) 1 large zucchini (chopped into small cubes) 1 brown onion finely chopped 1kg minced beef (grass fed of course!) 2 tbsp tomato paste 2 tsp reduced salt chicken stock powder (or 2 cubes or fresh stock) 100mls hot water 1 bottle passata (690mls) 2 tbsp chopped fresh oregano Salt & pepper to taste Preaheat oven to 210 degrees. In a big baking dish add the olive oil and garlic and put the dish in the oven to heat the oil. Add to the hot oil all the veg, dried herbs and crumble in the meat. Stir well. Cook for 15mins then stir to break up the meat and cook for another 15mins. Mix the hot water, stock and tomato paste together and add to the dish together with the passata snd stir. Cook for 10 minutes then stir in the oregano and cook for another 10mins. I served it with gluten free pasta. I'll also be making this sauce into a lasagna and freeze some as well. Enjoy!

18.01.2022 Feel like Spaghetti Bolognese? That is what my kids wanted for dinner tonight! My daughter wanted to use the spiraliser so she did the veg for me. This is a batch cook so will do a few dinners.. good to be organised!! Plus it is full of veg! 2 packs of premium minced beef 1 large onion (cut up or grated) 3 cloves garlic crushed... 1 large carrot (spiralised or grated) 1 large sweet potato (spiralised or grated) 1 large zucchini (spiralised or grated) 1 small/medium bag of spinach leaves 1 x 690g bottle Passata 2 tablespoons/1 sachet tomato paste 1 teaspoon cinnamon 1 tablespoon dried oregano Half cup water Salt & pepper to taste In a big fry pan plop the mince in on a medium high heat. Do not stir!! Brown then flip/turn once. Once its browned on the other side you can break it up. Add tge garlic, cinnamon and oregano together with the tomato paste and half the passata and simmer until the meat is cooked. Transfer the meat to a big bowl. Add to the pan veg and the rest of the ingredients and cook for a few minutes before adding back the meat. Stir and simmer for 15mins. Add water when needed. We had it with gluten free spaghetti. Enjoy... we did!
17.01.2022 Lunchbox friendly zucchini muffins Thought I would make the kids and I some savoury muffins for lunch this week. An easy recipe that packs in protein and veg for your little ones lunch to keep them going! And they're gluten free! 1 cups zucchini grated... 1 carrot grated cup sweet corn 100 g thinly sliced leg ham thinly chopped (pick a natural ham with no added nitrates, preservatives etc) 1 cup buckwheat flour 6 eggs beaten 1 cup grated goats cheese 1/4 tsp paprika Salt & pepper Preheat oven to 180C. Lightly spray a 12 hole muffin tin with cooking oil spray. I actually did a 6 hole muffin tray and a 12 hole mini muffin tray. Place all ingredients into a large mixing bowl and mix until well combined with a fork. Don't over mix though! Divide the mixture between the muffin holes. Bake for 25 to 30 minutes or until muffins are golden and a skewer comes out clean. Enjoy!
15.01.2022 My yummy overnight chia pudding - perfect for breakfast or a yummy dessert! In my quest to create a yummy protein packed breakfast for my twins.. I think I am on a winner! The problem for me is the texture of traditional chia puddings.. so this one is a blended one! Basic Recipe:... 1/3 cup chia seeds 1 1/2 cups coconut milk (or almond, oat, goat.. whatever you like). I did half water and half milk 1/4 cup raw cacao powder 1 tsp rice malt syrup (you can use honey or maple syrup) Small pinch Himalayan salt 1/2 tsp cinnamon 1 tsp maca powder (optional) 1 tbsp *gelatin powder (just to add more protein and help to heal the gut) Blend everything up and put it in individual cups, bowls or pots. Cover and put in the fridge overnight. Top with pumpkin seeds, coconut, berries or whatever you like! *If you're a vegetarian or vegan omit the gelatin and use dairy free milk. Hope you enjoy it!
07.01.2022 How to keep hydrated in this hot weather? With this refreshing drink that also contains essential electrolytes: Blend 250mls coconut water with half cup frozen pineapple and a few mint leaves... enjoy
06.01.2022 These yummy chicken and veg fritters are perfect for school lunches! Full of protein and veg, these will keep them full and ready to learn! ps. they're gluten free and really really easy to make.. so easy my 8yr old daughter made them! Of course with a little supervision from me Ingredients:... 2 zucchini's (or 1 large one) grated 200g frozen corn kernals (defrosted) 1 cup spinach leaves finely cut up 1 cup shredded chicken (great for left overs) 1 cup buckwheat flour 3 medium or 2 large eggs whisked 1/4 cup milk 1/2 cup grated cheese (I used hard goats & pecorino) 1/2 tsp paprika Salt/pepper to taste Olive oil spray Preheat oven to 220 degrees. Mix all ingredients in a bowl. On baking trays form 1/3 cups of mixture into fritters. Spray with oil and bake for 10 mins. Turn and cook for a further 5 mins until golden brown. Lovely served with homemade tomato sauce and a green salad. Enjoy!

03.01.2022 I felt like some comfort food so my daughter and I made these corn fritters for dinner! They're packed full of protein and are free from dairy, gluten and sugar. Sorry no real measurements: a couple of cups of defrosted corn kernals, cup of buckwheat flour, 2 eggs, 1-2tsp of cumin, 1tsp turmeric, salt & pepper and enough coconut milk to make a batter. Cooked them in coconut oil. Enjoy!!

02.01.2022 Ok so I thought I'd have a head start on dinner tonight and make a meat sauce that I'll serve with zucchini and sweet potato noodles - I'm obsessed with my spiraliser! This is the yummiest mouthwatering (to me at least) meat sauce - so much so I had to have a lttle bit before dinner! So what is the secret ingredient to make it so yummy? Cinnamon! It gives it a rich depth of flavour! I cooked minced meat - I used beef although you can use any meat even turkey mince. While it w...as cooking I blended in my Ninja 1 tin of organic tomatoes, 2 tablespoons of tomato paste, 1 teaspoon of mixed herbs or oregano, 1/2 teaspoon of cinnamon, 2 garlic cloves, a little olive oil, 1/4 cup water, Himalayan salt and pepper to taste. I then added the sauce to the meat and simmered for 15mins. I didn't add onion as my son can't eat it. Of course you can add loads of veg. I didn't as we're having it served on veg. Top tip - tip the mince in a hot pan and don't turn until it has caramelised then turn it once, let it caramalise on that side then break it up to cook. This stops the meat stewing. Enjoy!
01.01.2022 I felt like something sweet for breakfast today for Father's Day.. although my Dad doesn't live close I'm sure he'd love these! I looked in my cupboard and I was out of my favourite flour Buckwheat! So I used cornflour.. it was an experiment that I think worked! My first one didn't flip as I didn't put enough batter in. I whisked a large organic egg, 1/3 cup of milk (I used coconut), 2 teaspoons coconut sugar, 1tsp GF baking powder and about 6 heaped soup spoons of cornflour.... Slice up loads of strawberries. Over a medium heat I added a bit of butter to a round omelette pan, added the strawberries then half the batter. Cook until bubbles form the very careful turn it over (no flipping!!). It makes 2 large ones. Enjoy and of course its Gluten Free.. replace the butter with coconut oil to make it dairy free.
01.01.2022 Ok anybody that knows me know I LOVE CHOCOLATE! So after I made some magnesium cream using cacao butter (see my Natural Spirit page for recipe) I thought I'd give chocolate making a go! Plus I had a craving!! Thanks to the cacao this recipe will give you a boost of antioxidants, magnesium, iron, calcium and its a good mood booster! I apologise for the measurements as I just make things intuitively!... 1/3 heaped cup cacao butter (I used raw and organic) 2 soup spoons of raw cacao powder 2 tsp rice malt syrup Nuts for topping - I used macadamia, pecan and hazelnuts Melt the cacao butter slowly in a ban marie (I used a glass bowl over a saucepan of nearl boiling water water). Then once melted (make sure it doesn't boil) add the cacao and syrup and mix. Let it cool and stir regularly. I was in a hurry so I put it in the fridge for 5mins and stiring a couple of times. Line a baking tray with baking paper then pour out the chocolate with a spatula and add nuts. Pop it back in the fridge to firm up. You can add coconut flakes, cinnamon, dried fruit... anything you want! Don't add the syrup if you like dark choc or add more if it is a bit bitter. Enjoy!! Ps my daughter and I will be doing some experimenting next week!
