16.01.2022 - XMAS SHORTBREAD - I LOVE shortbread at christmas time, if you're up for some homemade baking, then you must give these a go! This recipe focuses on REAL food, a lot of store bought shortbread are full of overly processed vegetable oils & unnecessary additives. Happy Xmas Baking ... -Stacey x RECIPE: Makes: 15 Ingredients: 2 cups Almond Flour cup Grass-Fed Butter, melted 2 tsp Rice Malt Syrup 1 tsp Vanilla Extract 1 tbsp Extra Virgin Coconut Oil, melted Method: 1. Preheat oven to 180 degrees conventional & prepare a baking tray. 2. Combine all ingredients in a medium bowl adding the flour last. 3. Once well combined, use a rolling pin and roll out to cm in thickness. 4. Use a cookie cutter for desired shapes and place on the baking tray. 5. Bake for 15 minutes and allow to cool on tray. 07.01.2022 - VANILLA BEAN NICE CREAM - Vanilla ice cream is my favourite, but many store bought ice creams use imitation vanilla... it makes me so angry! Fortunately we can make our own and make sure we are eating REAL NATURAL food! I have included this easy peasy recipe below for you to whip up in 2 mins max! -Stacey x ... SAVE THIS: Servings: 2 Ingredients: 1 Vanilla Bean, split lengthways (alternatively 2 tsp Vanilla Extract) 3 Frozen Bananas 2 tbsp Coconut Milk cup Cashews Method: 1. Scrape seeds from vanilla bean. 2. Blend seeds and remaining ingredients into a smooth consistency. 3. Scoop into bowl and serve immediately or freeze for later on. (Hint: If you freeze it, you will most likely need to leave it to defrost for at least 10 minutes). See more
07.01.2022 -NUT BUTTERS- There are SO many options on the supermarket shelves these days, it can be hard to know where to start. As I always say CHECK THE INGREDIENTS! Turn over the pack and take a peak a what you're actually eating. ... Nut butters should be made of only NUTS, no need for vegetable oils, sugar or additives. Don't stress if there is a touch of salt. There are many brands I love such as: @mayversfood @melrosehealth @noya.nutbutter If you always buy PB how about mixing it up and trying something new from time to time, your body thrives off diversity! 03.01.2022 - CRISPY OAT TOFU NUGGETS - This recipe was so much fun to develop! I used @gfoats to create a crispy golden coating, which made the tofu nuggets have a beautiful texture & of course made them super tasty! The recipe is below! But if you want the homemade dipping sauces to accompany the nuggets (natural bbq or greek yoghurt & lemon dill), head to the link below to get the full recipe from my website! Also use "STACEY10" on @gfoats for 10% off anything storewide!... -Stacey x Ingredients: 200g Firm Tofu, cubed 1 tbsp Extra Virgin Coconut Oil Batter cup Unsweetened Plant-Based Milk (I used Almond Milk) cup Buckwheat Flour 1 tsp Apple Cider Vinegar Crumb 1/3 cup GF Rolled Oats @gfoats 1 tbsp Nutritional Yeast 1 tsp Cumin 1 tsp Onion Powder tsp Garlic Powder Pinch of Salt Pinch of Pepper Method: Lightly blitz crumb ingredient in a blender until combined. Combine crumb mixture and batter in two separate bowls. Coat tofu pieces in batter and then proceed to coat in crumb mixture and set aside. Heat oil in a medium frying pan on a medium heat. 03.01.2022 - CAULI TOAST BREAKY - During summer my body often doesn't feel like carbs, I intuitively pick lighter options. Which means I often don't feel like toast for breaky. A great substitute is using cauliflower! Thinly slice the cauli & pan fry it, browning each side. This is a great way to get in some extra veg & I bet you won't even miss the bread. ... 01.01.2022 -LUNCH TIME- I often get asked what's a quick easy lunch. I usually encourage to set some time aside the night before to quickly prepare something, that could be leftovers or whipping up a nice salad. But for those days that just get in the way, this is such a simple option! Tuna Rice Cakes with Tahini & Apple This is a light yet well balanced lunch with carbohydrates from the rice cakes, protein from the tuna, healthy fats from the tahini, veg/fibre from the sal...ad and extra carbohydrate/sweetness from the grated apple. 01.01.2022 - GOJI BERRY SMOOTHIE - I always seem to overlook goji berries in my pantry, so I've created this delicious nutrient-packed recipe to make sure I'm using them up & reaping the benefits!
