12.01.2022 Ok so when it comes to breakfast Im either an eggs & big breakie kinda gal, or coffee So last week when I discovered coconut oats I thought Id have a crack at home- delicious & super easy Recipe & pic from @olivemagazine Enjoy xxx Ingredients... * half-fat coconut or almond milk 600ml * porridge oats 300g * chia seeds 1 tbsp * pumpkin seeds 1 tbsp * maple syrup 1 tbsp * cinnamon a pinch TOPPINGS (optional) * toasted coconut flakes or coconut yogurt or kiwi fruit or toasted hazelnuts or banana slices or passion fruit or stewed rhubarb to top Method STEP 1Put all the ingredients into a bowl. Mix well, cover with clingfilm and leave overnight in the fridge. Mix in more milk to serve if its too stiff, spoon into bowls and top with toasted coconut flakes, more seeds and fruit if you like. 08.01.2022 TWO INGREDIENT (no wait) GREEK YOUGHURT PIZZA DOUGH Ive been watching @mummywearsprada make this dough for months & today Ollie and I gave it a run & it really is as easy & delicious as claimed, WINNER 13 CUPS Self Raising Flour 22 CUPS Greek Yoghurt... HOW TO MAKE GREEK YOGHURT PIZZA DOUGH: * In a bowl pour the Greek yoghurt and the self raising flour. Mix with a spoon until well combined. * Wipe down bench with lemon wedge, then dust a clean counter top with more flour and lay the dough out. * Knead for a few minutes until dough is tacky (not sticky- if sticky add a little more flour). * Roll out to desired thickness, and lay onto a prepared tray (greased or lined). * Top with your favourite toppings. * Bake in a preheated 230 degree oven for about 10-12 minutes once topped. * Keep a close eye on your pizza while it cooks, adjusting time as required.
