If you have any vegetables getting a bit tired in the refrigerator due more enthusiastic shopping of late, you can always get the enjoyment and the nutrition from using them in stirfries, omelettes and soups. This meat and vegetable soup tastes great (better than the photo gives credit), is healthy and helps provide the fluid - all so important during this calamitous time. Make extra, put it in the freezer or share some with your neighbours. So stay safe, eat well and remember the 1/2 full glass where ever possible

10.01.2022 HEALTHY EATING WHILE SOCIALLY DISTANCING So you are staying at home more but bought a few extra bananas that are getting tired. Try this yummy banana cake recipe to go with your coffee - and it is freezable - so make double to have with company (oh sorry! - have in front of NETFLIX or at the desk while working from home. Now, that is a plus stay safe and happy prepping YUMMY BANANA CAKE Ingredients 120g butter... 2 eggs (lightly beaten) 1tsp Vanilla extract 1 1/2 cups mashed banana (3medium bananas) 1Tsp bicarbonate of sofa 1/2 cup milk 2 cups self raising flour Method Preheat oven 180 degrees C Grease a 20cm cake tin and line with baking paper Beat butter, sugar, eggs and vanilla in bowl until creamy. Dissolve sodium bicarbonate with milk in another bowel with metal spoon. Add flour to this and mix with spoon until all milk /bicarbonate mixture is smooth. Combine all ingredients and spoon into prepared cake dish. Place in the oven for approximately 1 hour or until a skewer comes out clean. Enjoy, be patient, be happy and stay safe!!

02.01.2022 The World Cancer Research Fund1 states that to reduce your risk of bowel cancer you should limit your intake of unprocessed cooked red meat to 350 500g per week and to eat little, if any processed meats. This is in line with the Australian Dietary Guidelines2 designed to reduce the risk of chronic diseases such as heart disease, strokes, type 2 diabetes and many types of cancers. A recent study in the Annals of Internal Medicine3 concluded that we should not be restricting ...our dietary meat intake which is in direct opposition to the national and international guidelines. As with many research studies (particularly dietary studies) it is very important that the data is interpreted correctly. Some of the criticism of the study from the Annals of Internal Medicine are that the authors: 1) Only included some studies in the reviews and not all 2) Excluded studies that compared vegetarian diets 3) Ignored social, economic and political factors that affect our diets 4) Ignored that fact that the quality of a diet cannot be judged on a single food, but the whole dietary intake needs to be taken into account. In summary: Poor diets are a leading contributor to chronic diseases including heart disease, type 2 diabetes and many types of cancers.
