22.01.2022 Focus Foodspo Our focus product is currently lettuce, and in this trying time for everyone globally, prices have increased significantly. This particular lettuce cost me $5.80 from my greengrocer, but, it is fresh, crispy and versatile. I made a delicious San choy bow as our focus product recipe, but this lettuce will also be used as a base for salads and to use on sandwiches and wraps over the coming days. It certainly wont go to waste!... How? Cook up 500g mince (pork or chicken). Set aside. Cook up garlic, ginger, carrots, mushrooms, water chestnuts, chilli and shallots (or any variation of your preferred ingredients) Combine the mince with the vegetables. Add oyster sauce, soy sauce, peanut oil and rice wine vinegar. Scoop mixture into washed lettuce cups, or for a different spin on this meal, turn it into a Bow Bowl (refer to picture 2 - this is my personal preference!) 19.01.2022 Focus Foodspo Our focus product is currently sweet potato and an easy one with the current weather Its freezing and the perfect way to warm up is with a sweet potato, carrot and chickpea soup soup. Add in a slice of garlic and its a winter meal perfection. How?... Brown up 1 onion and 2 cloves of garlic in a medium saucepan. Stir in 2 tsp cumin, 1 tsp chilli powder and 1 tsp garam masala. Add 600g sweet potato and 400g carrot. Cook for 5 minutes, add in 800mL chicken stock and bring to the boil. Simmer on medium for 20 mins. Add 400g chickpeas and let simmer for 10 mins. Blend batches of the soup until it is smooth. Add a squeeze of lemon juice and serve hot with salt and pepper to taste. Enjoy! This weeks recipe is a Nectarine and bocconcini salad, and it was truly summer on a plate! How?... Lightly chargrill nectarines, with a spray of olive oil. Once cooled slightly, mix in with cut cherry tomatoes, baby bocconcini and your favorite fresh herbs. Dress with an olive oil, honey and lime dressing, and a little salt and pepper. Enjoy! 09.01.2022 Focus Foodspo Our focus product is currently potatoes and a very easy pick for me. One of my favorite dishes, a creamy potato bake. The best part is chucking some extras like crispy bacon, or mixing up your potatoes and including a mix, such as sweet potato too! You cant lose! How?... Preheat oven to 180. Slice all your potatoes thinly and lay them in a casserole dish. Mix 1/4 cup flour, 60g butter, 2 1/3 cups milk and 2 cups cheese in a saucepan until it creates a thick creamy cheese sauce. (Or purchase a potato bake sachet - cheaters edition) pour sauce over layered potatoes. Cover with alfoil and cook for 45 mins. Take off alfoil, sprinkle with extra cheese and bake for a further 15 mins, or until the top is crispy and brown. Enjoy! 07.01.2022 Focus Foodspo Our focus product is currently rhubarb and I wanted to create one of my favorite winter desserts, an apple and rhubarb crumble. How?... Cut 3 Granny Smith apples and a bunch of rhubarb into small pieces and place in baking dish. Combine 2 tsps caster sugar, 2 tsp orange rind and 2 tbsp orange juice and pour over apple and rhubarb mix. Bake covered for 30 mins at 160 degrees fan-forced. Mix 2/3 cup brown sugar, 80g butter (chopped and chilled) and 1 cup self raising flour. Combine with your fingers until mixture turns crumbly and resembles coarse breadcrumbs.
