25.01.2022 Not sure if you could tell, but we’re pretty excited about this year’s launch of Ginache. Our business has gone through a lot of growth in a short period of time, and Ginache is a prime example of a product we decided to invest in. To celebrate, listen to Jess, one of our amazing distillers, talk us through the flavour profile and the creation of this year’s release. If we do say so ourselves, the flavour of this year’s Ginache is incredible. There’s heaps of berry on the ...nose and flavour developing into tinner plum and strawberries and cream on the palate. It’s a perfect representation of how spectacular growing conditions and a bumper crop can affect the overall flavour of the final product. You can purchase a bottle now through the link in our bio. One of the most exciting ingredients that’s been included was Kalamata olive brine. This is combined with whole Kalamata olives which are then pot distilled. It’s very rare that you can call a waste product an exciting ingredient but anybody who loves a dirty ma...rtini knows exactly how much punch is delivered by a single teaspoon of the stuff. Local almonds are also included to enrich the mouthfeel and oranges to complement the variety of fresh herbs included in the recipe. The result is a cracking martini gin, perfect in a dirty martini but also amazing in a gin and tonic, garnished with orange and bay leaf. You can find our drink recipes in the bio. See more

Fresh acidity is balanced by the candied apple and fresh raspberry of our 2021 Ginache - held together with a beautiful creamy texture that tastes even better than it looks. Ingredients... 60ml Ginache 30ml Lemon juice 20ml sugar syrup 1 x egg white Orange twist to garnish. Shake all ingredients into a cocktail shaker without ice, to emulsify the egg whites. 17.01.2022 It’s with great excitement that we are able to announce Kate Rowlands as our new General Manager replacing the outgoing legend that is Stuart 'Chewy' Morrow. Anyone who has spent anytime in the Adelaide hospo scene has inevitably run into Kate. After returning from working overseas, she spent three years at Electra House Hotel as their training & development and restaurant manager, winning multiple awards for both the restaurant and their in-house sustainability program. ...She was most recently at ORSO as their business development manager. Her passions are helping and watching people grow in their roles, supporting local producers and is currently obsessed with trying to figure out how we can make hospitality a more sustainable industry. She loves a martini, can’t stand a Negroni and is a mad keen All Blacks fan, which is clearly where she gets her talents for illegal armbars and ill-disciplined scrummaging (just make sure she never has to kick you out of the venue). She loves cats, she has two named Charles and Eddie, who are named after the 1992 pop classic ‘Would I Lie To You’. Obviously. The photos above highlight the various stages of her cat excitement. Stage 1: Kate sees a cat. Stage 2: The cat sees Kate. Stage 3: The cat is now walking towards Kate. Cue happiness and unbridled joy. We’re so thrilled that Kate has joined our team. She wasn’t even supposed to start until this week but she stepped up when we needed her, with restrictions starting again, she started the job a week early to help the team navigate the situation. With such a superstar kiwi boss lady in charge, we should start calling her Jacinda! Chewy is heading over to Adelaide Hills Distillery to head up their whisky program (which is something that he has always been passionate about). In the meantime, he will be doing some work with Lot 100 running their tours and driving their creative offering. 14.01.2022 Over the last few months we’ve loved seeing the incredible response to our Step Into The Never Never Cocktail Competition! Working with the adage, ‘Less is More,’ the competition challenged bartenders to create great drinks with fewer ingredients - as long as it had our Triple Juniper Gin. We started our little brand by treading the footpaths of Australia’s cities and calling into our favourite venues with a bottle of Triple Juniper in hand. Never Never began in the bar...s and we’ll continue to play our role in advocating the industry and promoting the next generation of Australian bartenders. But the time has come to announce the winners! Needless to say, all the entrants made our decision incredibly tough. The quality of entrants really highlighted the amazing hospitality industry we have in Australia and why it’s so important for everyone to support your local where you can. 09.01.2022 COVID-19 UPDATE With the recent changes to venue restrictions in SA thanks to the ol' COVID chestnut, we've made some slight adjustments to operations at our distillery door. Fortunately, we prepared for such a situation and with your support and diligence we can continue to trade as the SA Gov gets everything under control. ... Our evening Friday Twilight trade will now be by booking only - you can do this through our website in the normal way. This week we have LizBiz Entertainment pumping out the live music with food from @cucinastrada. To make the next few weeks as easy and safe as possible, we'd ask that you checkout and abide by the below updates. Hopefully if we all do the right thing we should be back to normal sooner rather than later! 1. Service will be seated only, including outside. This will limit our capacity slightly and mean that picnic rugs or standing drinks won't be possible. Luckily, we have a MASSIVE lawn, so we’ll be spacing out tables with at least 5m separation. 2. Please wait to be seated, this way we can ensure that tables have been thoroughly cleaned and sanitised before you sit down. 3. Guests must adhere to 1.5m separation between groups. You can’t join other tables or move chairs. 4. You must sanitise your hands upon entry. If you don’t or you present symptoms, we may refuse entry. You also must sign in using our QR code contact tracing upon entry. 5. We are largely an open-air venue, with vast lawns, however our service points are internal. This significantly slows service so please be patient. Our amazing team will be doing their best to keep the drinks pouring! 6. Menus have been removed from the venue for obvious hygiene purposes. 09.01.2022 So this is something that we've been massively excited to share for a while now. A number of months ago we approached the incredibly talented, local artist @billiejusticethomson to commission a pair of illustrations; our Triple Juniper Gin and its signature serve Gin & Tonic. When we first spotted Billie's bright and energetic interpretations of iconic drinks like the Negroni, Bloody Mary and a bottle of Dom - we knew we'd get along just fine.... Fortunately for us she already knew of Never Never and our gin! Billie bought a bottle of Southern Strength for her husband last year for Father's Day (great taste). Many of you would have come across Billie's work before. In August Billie's 'Flavour Memories' exhibition at the @SALAFestival was met with resounding positivity from the public. With her art described as an unapologetically nostalgic look back at the food & memories of an Australian life. Billie's work reflects her obsession with the kitsch, nostalgia and iconic food imagery. Like some of us at Never Never, you might have walked into a friend's kitchen and seen her incredible BIG magnets proudly displayed on the old Fisher & Paykel. Featuring everything from Chomp Bars to Champagne flutes. Either way, Billie is to us one of the country's most exciting artists and we feel extremely fortunate to have been able to work with her. The ADSA are held by the Royal Agriculture Society of Victoria and are very highly regarded within the Australian Spirits industry. We were judged CHAMPION across two different categories, which is a huge result for us and we're again very humbled to have even been in the mix. ... There was a total of 328 entries in JUST the gin category and our Southern Strength Gin was judged Champion Gin, a huge achievement for our middle child. Our Stockholm Syndrome Australian Aquavit was also judged Champion Alternate Spirit. Massive congrats to the team and of course PS40 who we collaborated with to create the spirit. These results also meant that we won the overall trophy for Champion Australian Distiller, an amazing achievement for our small brand. Massive thanks to the judges and all who entered. 2020 has been quite the wild ride (so far, there's still a month left) and while there's still a lot of unknowns going forward, we feel like we're definitely on the right track. 09.01.2022 Happy World Gin Day! We’re celebrating with our friends at @fevertreemixers who have launched their Malaria No More initiative, aimed at raising global awareness of this incredibly necessary cause. Malaria is one of oldest and deadliest diseases, devastating families, communities, and countries. Yet we have the tools to end malaria in a generation. Want to be part of the solution? Fever Tree are donating $10 for EVERY SHARE of this post. Together we can make a diff...erence while celebrating World Gin Day - and that’s something we can all drink to. But did you know the history of the G&T? Indigenous peoples in South America had long understood that the bark of the native Cinchona tree could combat fevers. Cinchona being one of the key ingredients in tonic water. This knowledge was passed to the Spanish during colonisation in the 17th century. The miracle cure travelled back to Europe and became known variously as ‘Countess’s powder’, ‘Jesuit’s powder’ or just the ‘fever tree’ (sound familiar?!). Gin rations had long been given to officers in the British armed forces - half a pint a day in fact! So it’s not surprising that some bright spark thought to mix it with their malaria medicine. Turns out, the juniper in the gin and the bittersweet quinine tonic were a match made in heaven! Pop in a lime to combat scurvy and some ice, and you have the most delicious medicine known to humankind. Can you still get away with saying your afternoon G&T is medicinal? Probably not, given that the amount of quinine in modern tonics is so low that you’d have to drink roughly 67 liters a day to prevent malaria. However, the refreshment is still second to none, and that’s reason enough for us to pair a healthy measure of Never Never gin with a good quality tonic and sit back and dream of the tropics. 07.01.2022 Our new Dark Series Med Gin uses Somerton Almonds from Taronga Almonds. Margaret and Mick Jones grow three different varieties of almonds on their four hectare property in Willunga. The trees are pollinated by their orchard bee hives in July and the almonds are harvested in February. We've also incorporated Lloyd Brothers Kalamata olives and the flavoursome brine they arrive in. They begin handpicking their Estate Kalamata olives in late May and continue through until e...arly July. After grading the olives and using a traditional pickling method in a low salt brine, the olives are hand packaged ensuring the fruit structure and sweetness is maintained throughout the entire process. Finally the thyme, lemon thyme, bay leaf and basil are all sourced from McMillan & Drew, a local grower. Who also supply the fresh herbs used in our distillery door cocktail menu. 06.01.2022 UPDATE >>> Well lucky for us, that was briefer than we expected. We will be up and going again tomorrow, Sunday 22nd of November with all the current restrictions in place. Bookings for Sunday are now live on our website so get cracking. You're all familiar with the drill now; no standing up drinking, table service only, appropriate spacing, wash your hands like a responsible human etc. Bookings are essential & seatings are capped at 90 minutes - you’ve gotta stay se...ated during except for when you’re ordering pinsa from @cucinastrada Unfortunately, due to these restrictions and venue seating capacities, you also can't duck across and visit the legends at @chalkhillwines under the same booking. We are currently in the process of contacting all previous bookings to ensure they are refunded or given another opportunity to visit us. If this is you we will be in touch shortly. 01.01.2022 5 times more, 10 times more. 100 times more! (but more like, 10 times more) This year’s Ginache release is bigger and better than ever! Albeit maybe not as big as our Head Distiller Tim thinks.. It’s only been a week since Ginache 2021 officially launched and the response has been absolutely incredible. We’re so proud of it’s amazing flavour and how it represents McLaren Vale Grenache and the 2021 vintage conditions. ... We have to give a shout out to the amazing McLaren Vale community, especially our friends at @hitherandyon and @dogridge_wines, who supplied us with this year’s Grenache grapes. We couldn’t have expanded the Ginache product without them and absolutely recommend giving them a visit next time you’re down our way.
