02.01.2022 Ever wanted to make your own tomato ketchup? Here's a great recipe from Graeme Stockdale's RED, HOT & SMOKIN'! Ingredients:... 1.5 kg (3 12 lb) ripe tomatoes(the same amount of tomato passata will do the trick) 250 g (9 oz) tomato paste 1 brown onion, diced 6 cloves garlic, peeled and crushed 2 cloves A splash of hot sauce 600 g (21 oz) caster sugar 60 ml (2 oz) maple syrup 250 ml (8 oz) white wine vinegar Salt and pepper METHOD Soften the onions and garlic in a little oil. Add everything else and simmer slowly for an hour. Blitz and pass through a sieve, or just blitz really well. Check viscosity by placing a tablespoon of sauce into the fridge to set. A few minutes should do the trick. If it needs to be a little thicker return to heat until desired consistency is achieved. Season with salt and pepper. Bottle up for your next hamburger, BBQ or cheese sandwich. It will last sealed in the refrigerator for 1 month. There's a whole section on condiments in this fantastic recipe book.
