24.01.2022 We are very proud to have been named a state winner in this years Delicious Produce Awards! Our St.Billie has been nominated before but this year we won! We're off to the national awards at the end of this month - fingers crossed. It is of course a group effort - Kerry who keeps the show on the road, Ben, Dan and Jacob who look after the animals, Kat who actually crafted the winning cheese and Zach and team who make sure that it all happens inside the factory. Thanks to al...l. 22.01.2022 Sometimes life sends curveballs...floods & droughts, bushfires & pandemics. It's part of living in Australia. (Maybe not so much the pandemic bit but we're now learning how they work too!) Last week Kerry developed a very rare neurological condition that made us appreciate how important small things are: feeling fresh grass under our feet, taking a few steps outside for a cup of tea or simply walking around the farm to check animals. He has a fantastic team of neurosurgeons,... doctors and nurses working with him with the goal to get him moving again over the next few months. We cannot speak highly enough of the their work - if you think dairy farmers work long hours spend some time in a hospital ICU - they are tirelessly dedicated angels. To simplify our lives we have closed our online shop for a few weeks but plan to have it open again when new systems are in place. And they will be in place because the whole NVD team has pulled together to run the show without Kerry or me for the past 10 days and we know they are up to the challenge of the next few weeks. We can't thank them enough. I know many will ask what they can do to help but honestly there is nothing - we've got this. Actually there is one thing: be grateful we live in a country with a fantastic universal healthcare system. Kerry has had a team of 10-15 people around him for 10 days with every machine that goes ping - and at times they pinged big time! When it's time to leave we won't pay a cent. 18.01.2022 Good Morning! This is Nashua Washed Rind. Based on the soft cheeses crafted by monks in medieval Europe, Nashua is complex: caramel, cooked cabbage, grass, floral and loads of umami. ... Traditionally washing was a way of keeping the rind clean, it has the unintended result of changing the way the cheese matures making it much more pungent than a typical bloomy white mould cheese. 06.01.2022 Good Sunday-morning-in-bed! Let’s talk about Blue I guess you’ve been wondering why blue cheese is often matched with sweet things jam, fruit paste, ripe fruit, sweet wine etc etc. ... Blue mould is bitter (if you don’t believe me scrape some out of an old piece of blue in the back of your fridge and eat it - not the cheese, just the mould. Bitter hey!) So cheesemakers put extra salt in to mask the bitterness of the blue. (If you don’t believe me take another scrape of blue and add some salt. Less bitter hey!) So we have managed to disguise the bitterness of the blue but now we have a salt problem. So...we eat blue cheese with something sweet that will balance out the salt. They brought with them cheesemaking skills from their homeland and Monte Nardi is testament to their heritage and connection to their new home. While they rubbed it in olive oil to help it mature, we rub ours in Macadamia - a local twist that works well.... 01.01.2022 Hi folks...it's time to get back on this horse! We've been for a bit of a ride! Fell off. Got back on. Fell off a couple more times and now seem to be back on and heading in the right direction. A big thank you to all the NVD staff, our family, and all of you who have been so understanding and kind. Of course a big shout out to the team at Gold Coast University Hospital, the Princess Alexandra Hospital Spinal Rehab Unit in Brisbane and the rehab team at St Vincent's Lismore. ...Angels all of them! Anyway...it's time to eat cheese and celebrate Australian life! Take a look at what Mavis's Kitchen did with one of our White Cows during Tweed Artisan Food Weekend just passed. Nothing like nuts and honey to flash things up a bit! (thanks for the pic too) We take pride in producing a bloomy white mould cheese that isn't a brie nor a camembert - it's just our White Cow. Florally and fresh fruity flavours, together with fresh milk notes and in this case some sweet honey.
