11.01.2022 Self isolation creations Yesterday morning I was about to cook some savory carrot roasties / pancakes for my family when realized I was too excited grating too much carrots I was also reminded it was a birthday of my gorgeous little granddaughter- 2 month old So we needed a cake. It would’ve been much longer for me to look for a recipe (I just hate following recipes to be honest), so I decided to make some sweet treat straight away using half of the carrot thinking ...what else to add Finding all other ingredients and throwing them all together was pretty easy and quick. So many times I‘be been asked to share the recipes and I did never mind. But I was always too busy to do so. Now we all have some time obviously So I’m happy to share and here we are, enjoy!!! Carrot cake w nuts, honey, salted caramel frosting & caramelized macadamia. Ohhhh yeaaaaaa.....the result has made our couple of days in isolation Ingredients: 3 large eggs whipped 100 g melted butter 0.5 tsp salt 100 g sugar Pinch of grated nutmeg Pinch of cinnamon powder Vanilla essence - a splash 1 tsp baking powder 200 g plain flour 3 large carrots grated 100 g mixed nuts chopped. Mix all ingredients, put the mixture into silicone or any cake tin you like (with baking paper if no silicone), bake for 40 min in preheated 180 C oven. Cool down on the rack. Meanwhile make a Caramel frosting: Melt 150 g sugar in a pan and cook till slightly brown, then slowly add 250 g sour cream stirring constantly and 100 g honey, cook for 5 minutes till reduced and sticky, then add 100 g cold cubed butter. Mix it trough till melted, slightly cool down. Slice cake horizontally in half, smear half of the frosting between layers and another half on top. Sprinkle w few flakes of good sea salt. Decorate w caramelized macadamia or any other nuts. (Throw few nuts on reheated pan, keep stirring till roasted and smell then sprinkle w sugar and few flakes of sea salt, keep stirring. Once sugar is melted and covered the nuts - done. Cool down and place on the cake the way you like) Forgive me for mistakes, this is my first trial to write down my own recipe in English #carrotcake# @ NINA Restaurant & Tapas Bar
