25.01.2022 Pickled Pine mushrooms done.. For the lady that wanted the recipe, here it is.. Ingredients: 300g pine mushrooms, 1 cup white wine vinegar, 3 tablespoons of salt, 3 cups water. Bring these to the boil add cleaned mushrooms in batches, cook for a few minutes until tender, do not over cook. Remove with a slotted spoon to a rack to drain, cook the rest of mushrooms. Cut in thin slices, taste to see if they need more salt. Place in sterilised jars with slivers of garlic, sprig of rosemary and enough olive oil to cover. They keep well in the fridge for weeks.. Happy pickling..
