This will determine the quality of the end product, so make sure to follow these instructions. ... 1) Remove tuna from the pack and wash both sides gently under cold running water. 2) Dissolve some salt in luke warm water (about 37). Place the washed tuna in the water for about 1 minute. *Make the saltwater solution the same salinity as seawater, which is 35g of salt per litre of water. 3) Remove the tuna from the water and pat dry both sides with a damp paper towel. 4) Dampen about three new pieces of paper towel, place one on top of each other and lightly squeeze out excess moisture. Wrap the tuna in this moistened paper towel. 5) Put the wrapped tuna on a plate and place in the fridge. *Note that if you simply put the frozen tuna in the fridge in the plastic bag, it will likely change colour and reduce the quality, so make sure to follow the above instructions and enjoy 37 1130g~40g 3
