25.01.2022 For me Christmas means compassion kindness Love and sharing kind food and good times with our loved ones humans and other animal species alike Merry kind Xmas everyone May your hearts open wide and may you have much happiness and love come your way ... Spinach circle or pie Greek spanakopita 2T Olive oil 2 T nutelex 2 cloves garlic 1x onion Bunch of silverbeat washed and taken stems off 1 bunch dill 1 bunch parsley 6 Green onions 1 veggie stock cube Pastry or filo 3/4 cup of rice Vegan cheese sauce 1tin coconut milk or cream 4 tbsp (20 g) nutritional yeast flakes 2 tbsp tapioca flour OR arrowroot flour/starch 1/2 tsp sea salt (or to taste) 1 tsp onion powder 1/2tsp garlic powder 2 Pinch of smoked paprika Put all ingredients into a saucepan and stir with a whisk. Once everything is combined, turn on the heat bring almost to boil then Let simmer on low to medium heat for about one minute until the sauce is stretchy and thick Heat frying pan add 2 T oil and add chopped onion Sauté for a couple of minutes Add nutelex then add rice and mix well and stir till it slightly browns add garlic and chopped green onions stir Add hot water 1/2 a cup at the time till it evaporates add some hot water with melted veggie stock in it When rice is almost cooked add Chopped silverbeat and mix together close lid and turn off And the silverbeat will wilt Take off stove and mix well together then add parsley dill Add your cheese sauce and mix together in a big bowl If you are using pastry to do the Xmas circle just defrost pastry and open up 2 sheets and stick them together side by side on an oiled tray Mix the spinach and rice filling with cheese sauce Put your filling in it and roll putting the pastry ends underneath Then make your circle join the ends brush with soy milk or olive oil Fork some holes in it for it to breath and place in moderate oven till it goes golden brown Next class I will show you how to make it in the filo pastry

21.01.2022 Hi everyone and Happy New year I hope 2021 Brings peace love and happiness your way I am having a cooking workshop from home on the Wednesday the 13th of January 5.30 pm till 8.30 pm ... I developed this menu with kids in mind as I have had some of the fussiest kids over the holidays and these dishes were a winner with adults and kids alike! We are Learning to make these 3 dishes Cheese boat Shepherds pie Kale cheese and mince in filo pie Salad already prepared prior Avocado lime cake dessert This dessert will be ready made for us to have on the night but we will learn to make this on the next class $50 each byo drink Inbox me for payment details and address So looking forward to seen you all again and sharing some lovely food

Some of you might like to learn to make vegan dishes for your kids, things that kids like to eat or teenagers. 01.01.2022 Stuffed peppers 4 peppers/capsicums 1 C Rice Water... Potatoes Olive oil 3-4 potatoes 1 cup shredded mushrooms 1-2 T Rice malt sugar for base of peppers 1 onion chopped Herbs oregano etc 2T tomato paste concentrate I cut the lid off the peppers and keep it intact so I can use it later Wash and clean your peppers Brush oil on the base of the oven pan and place your peppers on it live pepper lids out till last, I put cut potatoes around my peppers/capsicums to hold them up straight and end up with yummy roasted potatoes Cook in moderate oven until the skins get a bit soft, take any water out that has accumulated in the centre.. In a deep frying pan add 2 Tablespoons olive oil heat and add onions, sauté until soft add a tablespoon of nutelex 1 cup or of rice and stir to brown When ready poor some hot water slowly and stir when half cooked add shredded mushrooms and two tablespoons of tomato paste and keep cooking add water slowly as you need it, add 1-2 T rice malt keep stiring on and off until rice is almost cooked and water reduced Take rice of the stove add herbs such as finally chopped parsley, lemon thyme or mint Inside peppers pinch of sugar on the base and fill with rice mixture to the top poor some olive oil in the tray again put in the oven with lids cook and brown, you can open lids before serving and add toasted seeds or vegan Bio Feta you could also melt vegan cheese between the lid and the goodness inside
