10.01.2022 We have been doing some analysis on the leaves and shoot tips with the University of South Australia's Future Industries Institute and have found what we were looking for. The shoot tips have high levels of 1 Deoxynojirimycin a potent alpha-glucosidase inhibitor. To the rest of us it means it has the potential to be used as an anti diabetic agent. It is commonly used as a tea in Asian herbal medicine. This is good news for us, we just have to work out an engineering solution to harvest the shoot tips and make some dry Tea.

09.01.2022 Mulberry juice trade samples going out today. The colour still amazes me every time. Given up trying to stop my hands from getting stained though. Made some purée and am working on a paste also. Can’t wait for that with some cheese.
