He did it, in the late 1980s, for his ailing father who was missing the taste of the cheese his family had made before the long, impoverished years it suffered under Franco’...s dictatorship. Truly a labour of love, Ambrosio re-established the family sheep farm, milked the animals himself, then began experimenting. Failure followed failure until, with one batch, he nailed it.
