18.01.2022 Important Update - Noosa Eat & Drink Festival Event Cancellation It is with the deepest regret that we announce today the cancellation of the Noosa Eat & Drink Festival for May 2020 said Tourism Noosa CEO, Melanie Anderson.... The Tourism Noosa Board has made the decision following the Federal Government announcement of non-essential mass gatherings being banned across the country. The festival is a vital part of Noosa’s tourism economy but the health and safety of our residents and visitors must come first. Our festival team will work through ticketing arrangements with full refunds being provided for guests over the oncoming weeks. The festival comes together each year through the support and collaboration of so many businesses in our local community as well as our event partners and visiting talent and of course the thousands of visitors who attend each year. Noosa Eat & Drink Festival Director Sheridah Puttick said The news of the cancellation is heartbreaking, and will no doubt be a disappointment to so many. This year’s festival was set to be a true celebration of Australian talent and we are incredibly proud of the program that had been developed with our industry. 14.01.2022 What's on the menu tonight? Why not try this pasta recipe by Chef Matt Golinski - Official that was inspired by a home delivery box from Piggy In The Middle containing some of their pork mince and fresh fettuccine made from their pastured eggs. Fettuccine with Pork, Tomato and Fennel Ragu (Serves 4)... Ingredients: 500gm fresh egg fettuccine 500gm pork mince 2 tbs olive oil 1 onion, finely diced 2 cloves garlic, sliced 1 tsp fennel seeds 30ml olive oil 4 fresh bay leaves (or 2 dried bay leaves) 1 large carrot, finely diced 2 sticks celery, finely diced 50gm tomato paste 500ml chicken stock 250gm fresh tomatoes, diced 100ml milk salt and pepper 75gm Parmesan, grated Method: In a heavy based frying pan, sauté the onion, garlic and fennel seeds in the olive oil until soft. Add the carrot, celery and bay leaves and continue to fry over a low heat for 10 minutes, stirring occasionally. Add the pork mince and break up through the vegetables with a wooden spoon. Continue to fry over a low heat until the pork mince is lightly coloured. Add the tomato paste and stir over a medium heat for 2 minutes. Add the chicken stock and diced tomatoes and bring to the boil. Reduce heat and simmer for 10 minutes. Add milk and continue to simmer for at least one hour, adding more stock or water if the mix starts to dry out too much. Season with salt and cracked black pepper. Bring a large saucepan of salted water to the boil and cook the fettuccine for 2 -3 minutes. (more like 12 minutes for dry pasta) Drain the pasta and immediately mix through the pork sauce. Divide between 4 bowls and serve with generous amounts of freshly grated Parmesan.

08.01.2022 Alanna Sapwell's Noosa Pop Up restaurant, Esmay, is excited to be welcoming chef Emma McCaskill for ‘Pop In @ The Pop Up’, a one night only collaborative dinner between Emma and Alanna. Esmay will end its tenure on Sunday the 11th of October. ‘Pop In @ The Pop Up’ will help celebrate Esmay’s time in residence at Wasabi Restaurant. This collaborative dinner allows them to recreate their first meeting during Noosa Food and Wine Festival (now Noosa Eat & Drink Festival) two y...ears ago, while Emma was doing an event at Wasabi Restaurant. It is Emma’s passion for creating food which celebrates local, seasonal produce which has made Alanna so excited to work with her for the first time. Emma and I share the same food philosophy; taking the best local produce, and using it to create honest, deliciously crafted food. 03.01.2022 We have your Easter Sunday baking inspiration sorted. Whip up a batch of these Honey Madeleines by Darren Purchese of Burch&purchese Sweet Studio and make your Easter just a little sweeter. Honey Madeleines makes 24 medium Honey Syrup... 150ml honey 100ml water lemon, fine zest Bring ingredients to a boil in a small saucepan and allow to infuse for 30 minutes before straining the syrup into a jug Honey Madeleines 90g unsalted butter 4 eggs 150g caster sugar 20g soft light brown sugar 30g honey pinch salt 180g plain flour 5g baking powder 1. Preheat an oven to 190c and brush a silicone Madeleine tray. 2. In a small saucepan, cook the butter to a light nutty brown color, whisking occasionally. Remove from the heat and strain the butter through a sieve into a small bowl. 3. Use an electric mixer to beat the eggs, sugar, honey and salt. Continue to beat until the mixture becomes pale and doubles in volume. 4. Sieve the flour with the baking powder and gently fold this into the batter followed by the nut butter. 5. Rest the batter for a minimum of a couple of hours in the fridge before spooning or piping the mixture into the moulds and baking for 15 18 minutes or until golden & cooked. The sponge should spring back when pushed lightly with the tip of your finger. 6. Brush lightly with the honey syrup and serve immediately.
