19.01.2022 Healthy Thai Chicken Patties This lean and delicious pattie is a great burger hack! Everyone will love the zesty lime and Thai flavour these patties are an all-time favourite! Ingredients... 500g chicken mince 2 shallots, finely chopped 1 tbsp lime zest (or a vegetable) 2 tbsp Gourmet Garden Thai Stir-In Paste Method Into a bowl place all the ingredients and season. Stir to combine well. Roll into 6 equal size patties. In a large non-stick frying pan over medium heat, cook the first side for 4 minutes, turn and cook the second side for 4 minutes. Turn off the heat and sit for 4 minutes. Serve hot, with sweet chilli sauce, lime wedges, fresh coriander, shredded spring onion and red chilli.

09.01.2022 Looking for something healthy and a little different for Sunday lunch or dinner? Try this Salmon with Warm Pesto Potato Salad Whip up this deliciously easy meal for the family. The sweet potato and spinach flavours perfectly with the salmon.... Ingredients 800g sweet potato, peeled and cut into even 4cm x 4cm chunks 4 x 180g salmon fillets Baby Spinach 150g bag IGA baby spinach Basil Pesto 2 tablespoons basil pesto Method Preheat oven 180C. Place the sweet potatoes on a baking tray and season with sea salt and cracked pepper. Cook for 15 minutes or until tender. After 5 minutes, place the salmon fillets on another baking tray, season with cracked pepper and bake for 10 minutes. Remove both, place the cooked sweet potato into a large bowl, add the spinach and pesto and toss to combine. To serve, place the delectable salad on a plate nestled next to a salmon fillet. Simple, healthy, delicious

Ingredients 4 croissants, coarsely torn 4 tablespoons strawberry jam 120g white chocolate, coarsely chopped 500g premium custard Method Preheat oven to 180C. Lightly grease a shallow baking dish with butter. Spread the torn croissants with jam and arrange in the dish. Sprinkle with white chocolate and custard. Bake until the top is golden and the custard heated through, 20 minutes. Cool for 5 minutes before serving.

01.01.2022 Can you believe it’s December in just a few days. Let’s get ready for Christmas by preparing these Easy Made Christmas Cookies Ingredients 1 cup softened butter 12 cup caster sugar... 2 cups plain flour 200g milk chocolate chips Method Preheat oven to 180C and line a baking tray with baking paper. In a large bowl, cream the butter and sugar, 2 to 4 minutes. Add the flour and a pinch of sea salt and mix to combine. Using a tablespoon of dough, roll into balls and place on the prepared tray. Use the tines of a fork to flatten slightly. Bake for 10 to 12 minutes or until just golden. Remove and cool for 20 minutes. In another bowl, melt the chocolate in a microwave in 30-second increments until nice and smooth. Drizzle the melted chocolate onto each cookie. Chill to set. Notes Rather than dipping the cookies into chocolate, melt only 100g and using the tines of a fork, dip them into the melted chocolate and drizzle one way, up and down. Then cross-ways to create a really pretty criss-cross pattern. I often make these and after I have dipped them in chocolate, I roll them in chopped pecans. These make a beautiful gift for your children’s teachers. I bought cellophane bags, ribbon and tags and we filled the bags with beautiful cookies, wrapped with a pretty ribbon and wrote on the tag Thank you after dipping to give as gifts to my boy’s teachers, in chocolate
