22.01.2022 As they say, all good things comes to an end and it’s now time to turn the page and start on a new chapter. It’s been an absolute honour to be in charge of the kitchen brigades across a vide array of outlets at the Sydney Opera House. Leading the teams for @trippaswhitegroup at this amazing venue has been a great experience, and I feel very proud to have mobilised and build such a strong team. Thanks to TWG and George Diamond for giving me this great opportunity, and every me...mber of the team I’ve had the great pleasure of working with, it’s been quite a journey and I could not have done this without you all. 14.01.2022 I usually steer clear of making the birthday cakes when requested by clients, however I felt a bit sorry for the birthday boy as he was celiac and thought to give him a real treat, but at the same time keep it very homestyle, I used a flourless chocolate recipe from @sallysbakingaddiction and it was awesome, changed a few bits to put my stamp on it like a salty rich ganache, creme fraise and no sugar in the mocha cream, probed it to 85degrees, wow super delicious and loved by all!! #flourlesschocolatecake #nordicdiningbykasper #glutenfree #birthdaycake #sydneyevents #sydneyfood #sydneylocals

10.01.2022 Thanks to Laura and Jesper for hosting a great event with Nordic Dining, it’s was a delayed New Years Eve party, to those who might not know, Sydney was under strict COVID restrictions so many NYE parties had to be canceled. 08.01.2022 Sydney golden wattle as it now turns to seed. It’s very interesting following the native fauna, this beautiful scrub has over the last few months developed from flower, to bean looking pods with tasty little green fresh seeds, now the pods have dried out from the sun and hot conditions causing them hem to burst open leaving the dried out wattle seeds freely exposed and with literally thousands and thousands of seeds on each bush there’s enough to forage and try out some usages at home, soon on the menu @nordicdiningbykasper #sydneygoldenwattle #nordicdiningbykasper #foraging #northernbeacheslocal #curlcurl #harborddiggers #freshwaterbeach #sydneycatering #sydneyweddings
