22.01.2022 I've managed to finally get some sign writing on the ute! Next up will be the coolrooms A huge thankyou to jess and Steve for everything! Today I was back out at hawkaway for Alex and his family to finish processing his big Angus and boy it didn't disappoint. Some fantastic looking cuts and a huge thankyou to Alex himself for sticking by me yet again asking lots of questions and packing his own beef. We were under the watchful eye of teddy who took on the position of meat in...spector for the day and was even snuck afew tasty snacks from the butcher.. shhhhh Another awesome day and happy butcher and customer How good is this See more



21.01.2022 Yesterday was a huge day! I was joined by Kate and Amos out in Ballan to finish cutting up the three steers. I'm excited to report the meat looked fantastic with such amazing texture and marbling my tummy was rumbling nearly the whole time I worked haha. I hope the pictures do them justice. Also a big thankyou to Kate and Amos for helping lift the weight off my shoulders with such a big job but still maintaining such high standards of work for which my customers have come to ...love. After that today I was out to Borneo to put a young steer in the coolroom for Graham. after a rough start tracking the little bugger in the paddocks everything went as smooth as silk, dressing out to a very healthy 200kg. I cannot thankyou guys enough for your recommendations and support helping me grow my business I know I couldn't do it without you I'm a very lucky man indeed.

20.01.2022 I was back in action today with Kate helping me pack. First up I was out to tyabb for Sue and Kats lambs. their dorpers cut up excellent with very minimal trimming. Also go to have a good chat and laugh fantastic people. Then it was back home to clean out the coolroom. After lunch we were off to Somers for dr johns hoggerts to be cut up. Being abit older they had abit more fat coverage but that's where the flavour is guys! I boned and rolled all the shoulders for boneless for...equarter roasts which looked delicious All in all another amazing adventure with new awesome friends. A very happy butcher See more

19.01.2022 This morning I was off on another adventure nice and close to home at Dromana. Rose needed her 18 month old Angus steer processed. The big boy was the naughty one in the heard not behaving running threw fences and being a bully so he had to go. Dressing out to be a very healthy 350kg im quite excited to see how well he cuts up. His colour and fat content looked right on the mark he will be extremely delicious. Thanks very much for the recommendations everyone im so greatful.... I love my job See more



17.01.2022 Today I was back out to Red Hill to finish of Suzannah and Trevor's 3 big hoggerts. I was lucky enough to have my amazing partner Kara packing and keeping me in line, thanks babe. Once we finished slicing and dicing I was off to Tyabb for Sue and her wonderful family to put some more lambs into the coolroom! Man I have been super busy lately I'd like to say thankyou so much to each and everyone who has supported me and my business spreading the word and getting me more work.. I appreciate all of it Much love guys

14.01.2022 Today I was out at narre Warren for Peter and his families 4 sheep. We were lucky enough to miss most of the rain but these guys were quite happy playing in the mud hehe! Everything went as smooth as silk. Theses boys were 14 months old roughly according to Peter, surprisingly they were quite lean as you may notice in the picture. 13.01.2022 I was back out to narre Warren this morning to finish processing franks 18 month old steer. It was a great day to be in the coolroom it didn't stop raining until I got home! I was flying solo which is always good every now and then to keep myself sharp. Have a look at some of these delicious looking cuts of pure Aussie beef, it doesn't get any fresher. I'm so happy with how everything turned out and I really love what I do.... I better get some sleep before nightshift at the steel factory tonight. Until the next adventure thanks for watching folks. 13.01.2022 Yesterday I was back in action with Kate out at somers for Sean's big 2 tooth lambs. The lambs had alot of fat coverage due to being afew months older I would usually process at but the meat looked delicious and who could complain with a nice big fat juicy lamb chop Delicious!!

12.01.2022 Today I returned to narre Warren to finish of Peter's lambs. I was extremely lucky to have my son join me to learn the trade and earn some pocket money. It was an absolute ripper day with the meat cutting up great. As the lambs were so lean I nearly didn't have to trim anything at all! 09.01.2022 Today I was off to process for one of my regular customer leno's friend Rob, out the back of my hometown rosebud! We processed a 4 year old heifer speckle. It was a great day with the boys and the cow dressed out fantastic at a very healthy 400kg. Id like to say a huge thankyou to leno for helping and recommending me to rob. 08.01.2022 Today I was out at Cape shank for Paul's 5 lambs. Paul has been a repeat customer for afew years now I love returning customers. I have been very relaxed taking advantage of some time off! I had enough time to organise some sign writing a huge thankyou to jess and Steve for all your help I love my coolrooms It felt great being back on the knives and I had a fantastic day... Cheers

06.01.2022 Time flies when you're having fun! Friday I was out to Somers for some big two tooth lambs for Sean. A big thankyou again to monty and Renee for recommending me as the man for the job! Yesterday i was lucky enough to have my offsider Brad help me tackle 3 big steers out at Ballan for kealee and her family! The meat looked delicious and I was salivating at all the delicious cuts. The coolroom was chockers filled up with a total of 935kg of pure Aussie beef..... On a personal note we welcome as a family our beautiful little addition Raven.. life really doesn't get much better then this!! 05.01.2022 I was back out to Cape shank to finish off Graham's Angus steer accompanied by Kate. It was a fantastic day with everything going as smooth as silk. The Angus cut up beautifully which I was very impressed. Also at Graham's request we made some delicious sausages. 3 different flavours, Aussie , tims secret recipe and a Moroccan flavour. 2 very unique flavours that smelt delicious man I really do love my work! 05.01.2022 I was back in action today for a retired doctor John out at somers. A huge thanks to Renee for recommending me to process John's lambs. I was lucky enough to avoid most of the rain. 05.01.2022 I was back in action today returning to Paul's at Cape shank to finish of his lambs. Boning all the forequarters for boneless roasts which would taste amazing slow cooked. I had to do very little trimming as the fat coverage was spot on. Something a little different on this adventure I noticed I had a flat tyre and Paul said no worries wait here.. and returns with a tractor and lifts the fridge for me! 05.01.2022 A big day today out at Cape shank. First up I processed an old heifer who had hurt her hip. Ill get some of the prime cuts such as eye and scotch fillet and some porterhouse. Most of the rest will be further processed for yummy sausages and mince. Considering the farmer was going to bury her he will end up with close to 260kg of beef! After a brief lunch I finished processing 4 lambs and 2 hoggets on the same property.... Everything turned out fantastic, happy customers and a very happy butcher. 03.01.2022 Today I returned to bronsons and Charlotte's to finish processing their 5 lambs and Angus steer. I was lucky enough to be joined by mickey j who I have worked with for many years at the butcher shop. The meat we cut was absolutely superb with plenty of marbling threwout the beef and lamb. Even mickey commented on the amazing quality of the meat. Bronsons and Charlotte's hospitality was seriously incredible, helping pack and organise our day and even cooked us brekky and lunch... 03.01.2022 I was off to Fingal this morning for bronson and Charlotte to process an Angus steer and 5 lambs. It was an absolute ripper of a day with bronson sticking by my side threwout the whole process even jumping in and getting his hands dirty giving me some help. I was very spoilt with coffee and some home made snacks We even have some of their neighbours dropping by to check out what we were up to and I might even get some more work! Another ripper adventure, a very happy butcher. Back to the steel factory tomorrow Until next time everyone cheers!

02.01.2022 Today I returned to Cape shank to finish processing Daryl's heifer. She had a badly damaged hip and due to her age she was going to be relieved of her pain shot and buried but I suggested we process the old girl. Honestly even i was surprised how well the meat looked on most of the cuts considering 90% was going to be for mince, burgers and sausages. We managed to get so much more for the customers and im over the moon she will be honoured and will give families lots of yumm...y meals instead of just being buried. Id like to thank alister for putting me in touch with daryl, Simone and also daryl himself for helping and keeping me company throughout the day. I was lucky enough to be given some delicious produce grown on the farm. Man I love this job lifes fantastic Cheers everyone See more
