19.01.2022 So in the industry we are in... we sell bait to a lot of friends. John Mallard from Great sandy straights fishing charters and Greg dropped off a couple of Queenies today because they are legends. So these are sliced and diced.... some shoulders for sashimi and a lot going in the smoker tomorrow. Bones, wings. And most of the flesh now in brine. Just brown sugar and salt. But of maple syrup but it will make its own brine overnight. Put it out in the sun to tack off the moisture then cold smoke for 3 hours and hot smoke for 4 hours at low temp to cook. Will post more. Just stuff we do for ourselves but the outcome is awesome.

15.01.2022 New 13kg zinc anodes welded on, 10 in total & new smash/shark bars welded on & undercoated today. Bit more underbody scraping & nearly ready for a paint....prop was also taken to Brisbane today for repairs....were getting there...
