22.01.2022 Salmon and sweet potato patties Dinner prepping for the family ( switch out a can of chickpeas or lentils for vegan option), you can follow the steps in these pics! These are super forgiving and versatile, this is what I used today ...... 1 large orange and one large purple skinned white flesh sweet potato 2 portions salmon, no skin -Boil potato and Steam fish on top 1 spring onion Few sprigs dill and parsley (any fresh herbs will work well) I red chilli Salt and pepper 1 tbsp lemon infused olive oil (use lemon zest and plain olive oil if you don’t have it) Good squeeze fresh lemon I wanted to add some capers but I couldn’t find any Mash everything together. Bake at 180C in a little coconut oil until golden - remember everything is cooked so it’s just about getting a little colour! Serve with rainbow veg and JBT avo Mayo You can also add things like peas and corn, and white fish will work just as well. Add some Thai herbs and spices for a yummy twist.
