11.01.2022 Archer’s Slice This slice was created by my 5yr old and it was honestly too good not to share! Ridiculously delicious for a throw in a bit of this and that method! Ingredients 10-12 medjool dates ... 1 tsp vanilla 1 cup organic shredded coconut 1/2 cup honey 1 cup almonds 1/2 cup hazelnuts 2 tbs cacao powder 1-2 tbs coconut oil Simply blitz all ingredients at high speed in thermomix place in loaf tin, out into fridge to set! Archer decided to top this with icing which we simply mixed coconut oil, cacao powder and maple syrup together and poured over! We then used the excess icing to make Christmas chocolate by adding goji berries ( red) and Pepitas ( green) to a thin even layer of icing on a flat baking tray ( lined with baking powder and setting in freezing!



10.01.2022 Muesli bar This quick, easy muesli bar will most definitely satisfy! not only does it take just 10 mins to make from scratch it is also gluten free, nut free, dairy free, egg free, and refined sugar free making it the perfect go to snack for both work and school lunch tubs. My goal in my cooking it to create refined sugar free, healthier options that still taste amazing for my family! This does just that. 10 medjool dates 1 cup organic coconut flakes ... 1 tsp vanilla 1/2 tsp cinnamon 1/2-1 cup pumpkin seeds 1/2/1 cup sunflower seeds 1/4 cup goji berries 1 Tbs coconut oil ( optional) Simply blitz dates and coconut on high speed, then add all other ingredients and blitz until desired consistency is achieved ( I find my kids prefer it blitzed more, so it’s smoother). Place in tin, at about 2cms high Bake in oven on 180 for 8mins Slice, and try to stop at one piece!

08.01.2022 We’ve been super busy experimenting with Christmas crafts and cooking lately! It’s safe to say our gingerbread was a success! There is so much learning for little ones involved in cooking and I just love the excitement on their faces which shows how very proud they are when they make something!

07.01.2022 SALMON ZOODLE BOWL So simple, quick and easy this one is definitely a go to for those busy week night dinners! Simply zoodle 1-2 zucchini’s Add as many vegetables as you wish I cook my veg and salmon in coconut oil, with fresh ginger and garlic and sesame seeds. I then add avocado and home made sweet potato hummus! Too with a drizzle of balsamic and you’re done!



03.01.2022 WARM MUSHROOM CAVOLO NERO SALAD with pistachio dukkah Mushrooms, Cavolo Nero, spinach, avocado, pistachio dukkah, coconut oil, balsamic! Simple, easy, delicious ... I served this delicious salad with whole roasted beetroot, and sweet potato pumpkin hummus.
