24.01.2022 Have you ever tried making risotto with whichever rice you had in the pantry because you didn’t think it would make a difference? If you have, don’t worry you are not alone! And if you haven’t, DON’T! Rice is not all the same!... There are 3 main categories of rice: Short grain - Has the most starch, making it more sticky when cooked. This rice is ideal for sushi and rice puddings. Medium grain - The ideal rice for risotto as the starch content helps to provide a creamy texture when cooked. Specifically, Arborio and Carnaroli are the best types for risotto where Carnaroli (IMO) is better due to its creamier yet firm texture. Long grain - Has the least amount of starch and produces a fluffier texture when cooked.Jasmine and Basmati are examples of long grain rice which are commonly used in Thai and Indian cuisines. Next time you’re making risotto, be sure to pick up some Arborio or Carnaroli rice. It will make a massive difference! 22.01.2022 Time spent in the family kitchen are some of my favourite childhood memories. Whether it was getting dinner ready with mum, cooking for a family BBQ with Nonna or the many (and I mean MANY!) occasions washing dishes with my cousins. I’m sure mum remembers a lot of complaining but all I remember is the fun, laughter and good times we would have together. Having so many kids join and be a part of last Saturday’s class reminded me of those special childhood memories. It made ...me so happy to see all of them enjoying themselves while learning how to create some delicious and nutritious food with their family With the school holidays coming up it is a great chance to get your kids involved in some cooking! 22.01.2022 Fun Fact Time ... 93% of Australians’s don’t eat the recommended 5 serves of vegetables each day! Don’t worry you’re not alone! I too have many days where I just can’t seem to fit them in. ... A tactic I use is to try incorporate vegetables into dishes that don’t usually have them. I also aim to have at least 1 type of vegetable with every meal eaten. One of my favourite vegetable adding hacks is to use mushrooms instead of breadcrumbs in my meatballs! Not only will it increase your vegetable intake but also helps to keep the meatballs soft and juicy. What is your favourite way to add extra vegetables into your diet? See more

21.01.2022 Am I the only one that gets excited by seeing a well organised herb & spice draw, cupboard or rack? An organised kitchen makes cooking so much more enjoyable! My top two tips for an organised kitchen:... Give everything a spot and make sure you put it back in that spot every time after you use it. Take time to label containers and shelves. They do not need to be individual labels - it can be group labels like flours, herbs and spices, oils, breakfast cereals etc. Give it a go Julie xxx

16.01.2022 Happy New Year I’m so grateful to be able to have a bit of a break before I start my new job next week and start up my ‘Nourished by Julie’ classes again on January 16th! I’ve really enjoyed being able to spend time with friends and family (despite tighter COVID restrictions), watching some of the latest TV shows , and even doing a little bit of reading ... 13.01.2022 Ever wanted to learn how to make pasta from scratch? In this Saturday’s class I will be teaching just that! We will be hand cutting fresh tagliatelle and serving it with a carbonara sauce but, in true ‘Nourished by Julie’ style, there is some extra hidden veg in this recipe .... Don’t worry if you do not have a pasta machine as I can teach you how to roll the pasta out perfectly with a rolling pin. 13.01.2022 Fun Fact Time I have an identical twin sister Yes, that’s right, there are two of us!! Mel is the reason why I hosted my first ever online cooking class and it just so happens that Saturday’s class is that exact class that it all started with.... Growing up gnocchi was one of our favourite pastas and honestly, it still is!! Mel’s recent move to Singapore had her missing our Nonna’s amazing gnocchi. So that she no longer had to go without it, I decided to try teaching her how to make it via Zoom. It was a great success and Mel has made it many times since. Excitingly, Mel will be joining me in this Saturday’s class to get her gnocchi fix. Do you want to learn how to make gnocchi alongside Mel and I? 08.01.2022 What tricks do you like to use to get through tricky times with fussy eaters? Spending time with my niece and nephew this last few days has reminded me about how hard it can be to get the little ones to eat their veggies! In my classes I like to add in extra veggies to classic dishes and also suggest different ways to prepare them. This helps you find new ways of getting your fussy eaters (no matter the age ), to eat their veggies. ... In Saturday’s class we made a Mexican chilli where we incorporated 8 different veggies into it: including celery capsicum cauliflower and zucchini. Even my 2 year old nephew Jai loved eating it with all those veggies. Julie xxx
