23.01.2022 I make a conscious effort not to waste any food. A great way to use up vegetables is to chop them up, roast in the oven and then add to an omelette. Omelettes are so versatile, you can add anything. In this one there is roasted cauliflower, sweet potato, chicken, goats cheese, topped with peppery rocket and avocado. Super quick to whip up!! It’s great to get the kids involved in cooking especially if they’re fussy eaters. You will have more of a chance in getting them to try new things when they’ve been part of the cooking process. 21.01.2022 It’s the end of the week so it’s time to get creative and see what I can whip up with whatever’s left in the fridge. I’ve always got black rice so I use that for my base. I use black rice because it’s rich in antioxidants, full of protein, low GI, good carbs and very high in Iron. Iron deficiency seems to be very common these days. Also added to the mix is grated beetroot and carrot which are full of vitamins and minerals, lean chicken breast giving me a good source of prote...in, avocado for good fats and goats cheese.....just because I love it!!
