23.01.2022 Winter isn't only for casseroles, stews and heavy food. This warm salad is nourishing and comforting and a perfect meal on it's own, especially if you need a night off meat. Recipe.... 1/4 piece of pumpkin - cut into even chunks 2tbs of Moroccan seasoning ... 1 cup of pearl barley 2 spring onions, sliced 8 sundried tomatoes 1 cup of fetta 2 cups of baby spinach Line tray with baking paper, place pumpkin chucks onto tray and coat with olive oil, then sprinkle with Moroccan seasoning. Cook at 180 degrees until golden brown, approximately 40 minutes. Meanwhile, cook pearl barley to packet instructions. Once cook, drain and rinse with hot water and place in mixing bowl. Add all other ingredients including cooked pumpkin and mix until pumpkin is well blended. 23.01.2022 I made an effort to sit down to a cafe styled lunch today because I'm still feeling a bit uneasy about everything, and the realisation of another 6 weeks of homeschooling 3 kids whilst working from home. Yep, that just sank in. I think I'll start writing more recipes with the aim of encouraging others to focus on the things that we can control. Things like cooking food that makes us feel great. 21.01.2022 The kindness of some people will never stop surprising me and one very beautiful soul (who Im lucky to call a dear friend) has started a beautiful "Pay it Forward" movement around town....ssshhh its a secret Im just really good at joining the dots This beautiful person has also kindly purchased a 4-pack of raw cakes to pay forward and I thought what better way than to put more kindness out there and ask you to share the love. 20.01.2022 **Recipe** 4 salmon portions 4 slices of prosciutto 4 large potatoes, cut into wedged... 4 slices of sourdough bread - cut into small crouton size pieces 2 cloves of minced garlic 1/4 piece of leek, sliced and diced super fine Cajun spice mix Extra virgin olive oil 1 bunch of broccolini Baby spinach leaves Dressing: 2 tbs of extra Virginia olive oil Juice of half a lemon 2 cloves of minced garlic 1/4 cup of Mayo 1 tsp of dijon mustard Fresh dill leaves Method: pour oil into a small mixing bowl, add garlic lemon juice, dijon & mayo and stir until well combined. Garnish with dill leaves after serving Prepare salmon by wrapping a slice of prosciutto around each piece and place in a shallow casserole dish, cover with a light dressing of olive oil and cover with a lid or foil. Bake in moderate oven for approx. 25 minutes. On a separate tray, cover with baking paper and spread potatoes evenly, coat with olive oil and sprinkle with cajun spice. Cook until crispy and brown, approximately 40 minutes. While the salmon & potatoes are cooking heat a frypan with a good amount of olive oil, add the leek and garlic and spread evenly across the pan, and then add the bread. Cook until well coated and browned. In a separate saucepan, steam or boil broccolini until just tender. To serve, place spinach leaves on base of plate followed by broccolini, potatoes, croutons, salmon and then drizzle with dressing and garnish with fresh dill. 19.01.2022 Check out this bowl of nourishing goodness which is also one for the not so soup eating people (in my house thats 2 out of 5). This chicken & veggie soup is packed with nutrients from chicken bone broth, veggies, spices and added protein from the chicken. I honestly dont think there is a better meal to give you an instant hit of wellness and support your immune health. If there is one thing you make this week it should be a big pot of soup that you can eat most days. Itll... keep you feeling well, and thats all any of us could want or need right now. + Recipe + 2 ltrs of chicken bone broth 2 cooked chicken breasts, shredded 2 lemon grass stalks, finely chopped 3 cm piece of freshly minced ginger 1tbs of cumin powder 1 tbs of turmeric powder 1/2 tsp of chilli powder 4 freshly minced garlic cloves 3 spring onion, finely sliced 1 leek finely sliced 1 bunch if brocolinni, finely sliced 6 small potatoes, cut into cubes 3 carrots, finely sliced 3 celery stalks, finely sliced Method: heat a stock pot with olive oil, add spices, lemongrass, garlic & ginger and coat well. Add all of the veggies and stir for approx 5 minutes. Cover with broth and put lid on pot, allow to simmer over a low heat for up to an hour or until veggie have softened. Add chicken just before serving.

13.01.2022 *Recipe* (do you really want this?! ) 1 tin of black beans (drained) 3 eggs 2/3 cup of coconut sugar... 1/4 cup of raw cacao powder or cocoa powder 3 tbs of melted coconut oil 1 tsp of natural vanilla extract 1/2 tsp of baking powder 1 cup of choc chips Preheat oven to 180 degrees. Place all ingredients (except choc chips) into a food processor or blender and mix on low speed until smooth. Line a square baking tin with baking paper, pour in mixture and spread choc chips evenly over the top. Bake for approximately 20 minutes. . . . . 10.01.2022 It's that comfort food time of the year so making desserts with some healthier ingredients won't make you feel like you've over done it. Ingredients like wholemeal flour, flaxseed meal and coconut sugar not only create a delicious cake but they make a good source of complex carbs with low GI so you could even eat these sticky date muffins for breakfast Recipe// 75 grams of unsalted butter... 2 eggs 1/2 cup of coconut sugar 8 medjool dates 1 tsp of backing soda 1 cup of orange juice 1 and a half cups of wholemeal self raising flour 1 tsp of cinnamon 1/4 cup of flaxseed meal 1 tsp of vanilla essence 1/2 cup of milk Sauce... 50 grams of butter 1/2 cup of coconut sugar 1 cup of yoghurt or cream Place dates in saucepan and cover with orange juice. Place over low heat and bring to a simmer, stir until the mix becomes a thick paste. Remove from heat and stir in the baking powder. In a mixing bowl, melt butter and stir in sugar and vanilla until creamy. Beat through eggs then gradually stir through dry ingredients followed by date mix and milk. Place into muffin moulds and bake in moderate oven for approx. 30 minutes. To make the sauce place butter in saucepan on low heat and add sugar, stir until melted and well combined. Add in yoghurt/ cream and mix until thick and creamy. Serve over top of muffins.

Today I was contacted by a dear friend who now resides in Queensland (but is a Victorian at heart) and she is feeling a little lost knowing that we are living a completely different lifestyle to the freedom the rest of the Country still enjoys. And because she has a heart as big ...as the world itself she has arranged for one of these raw cake packs to be delivered to her fellow nurse friend working long shifts in ICU, and then for another to be gifted via this post. 04.01.2022 Chocolate protein bars make an appearance in this week's raw cake packs. Made with medjool dates, raw cacao powder, protein powder (vegan), rice malt syrup and coconut oil. And just like all of oir raw cakes, they provide you with nutritional goodness in the form of protein, good fats and fibre. 04.01.2022 http://Recipe alert// They've been few and far between but I'm feeling inspired to try some new dishes and thought I'd share them with you, like this super delicious Thai green curry Ingredients....... 3 chicken breasts - diced 2cm piece of freshly minced ginger 4 garlic cloves, freshly minced 1 lemongrass stalk, sliced into really small pieces 1 tsp of cumin powder 2 carrots, slived into circles 4 spring onions finely sliced 1 head of brocolli, stalk removed 2 cups of baby spinach leaves For the sauce 1/2 jar of Thai green curry paste 2 tbs of coconut sugar 1-2 tbs of soy sauce 1 can of coconut cream 1 cup of milk Juice of one lemon Mix together in a small bowl 2 cups of cooked basmati rice. Fresh herbs to garnish. Method.... Coat a frypan with olive oil and add the spring onion, garlic, ginger lemongrass and cumin. Cook until fragrant and then add the chicken, topping up with extra olive oil so that the chicken browns nicely. Gradually add the veggies, stirring in well and finally add the sauce mix. Stir until well combined and transfer into a shallow casserole dish with a lid. Place into moderate oven and bake for approx. 30mins.alternatively, leave on stove top and cover pan. This will just allow the chicken to infuse the flavours and be more tender. Stir through spinach leaves and serve with basmati rice, fresh herbs and roti bread. Enjoy x

We try to spread our support for local small business as much as possible but my oh my its going to be hard not to lock in an order with these guys each week. 01.01.2022 Thank goodness the uphills also go down. Today I clicked over to 51km for the Fred Hollows Big Run and being day 15 into the challenge and reaching my goal, Im now hoping to get to 100km. The beetroot juice in the last photo is all I could think about up the hills so I jumped straight in the car afterwards and headed to @coffeeco.bendigo. So far theres been some very generous donations and weve raised $326 which will restore the sight of 9 people. 01.01.2022 The weekend seemed to disappear almost as quick as the two batches of these choc chip cookies, lucky theres just enough left for the school lunch boxes today. Recipe.... 125grams of melted butter... 1/4 cup of raw sugar 1 heaped tbs of raw honey 1 egg 1 tsp of vanilla extract 1 and a half cups of self raising flour 1/4 cup of flaxseed meal (just for some extra goodness) 1 cup of choc chips Melt butter, add sugars and stir through until combined then mix in egg and vanilla. Add all other ingredients and mix until a soft dough. Place teaspoon sized balls onto a baking tray and bake in moderate oven of 180 degrees for approx 15 minutes.
