Coddling eggs dates back to the 1800s, and an egg coddler* was a porcelain or pottery cup with a lid that was used to prepare coddled eggs. The eggs are soft-cooked and similar to poached eggs. 24.01.2022 Provene Style Chicken French cooking overflows with these one pan wonders. Using small cuts of beef, pork or chicken, adding herbs or spices to flavour and the pan juices to make a gravy. This recipe is great when serving for 4-8 people. As ever the vegetables and chicken are a handy source of proteins and other essential nutrients. I think of these dishes as a parents/share house saviour because cook and prep time is short, and theres not a lot of pans to clean. You wil...l need: a very large frying pan/skillet, chopping board, chefs knife, small knife, vegetable brush if you have one for cleaning the carrots. ngredients: 3-4 medium onions 5- 8 chicken thighs, bone-in is best here 5-8 small waxy potatoes, washed and cut in quarters 8 or more baby carrots depending on the size, but dont crowd the pan with them, use common sense, washed not peeled 1-2 cups chicken stock smoked paprika or use sweet paprika if you prefer (Spice & Co. @ Harris Farm) mild olive oil 3-5 cloves of garlic, depending on taste 1 flat tablespoon of cornflour dissolved in 1 1/2 cups of stock (give a stir before adding to the pan) a handful of chopped parsley or coriander salt & pepper Method: heat the oil in the pan, just above medium so the pans nice and hot add the chicken thighs and cook until golden brown on the outside add the onions and stir add the baby carrots and potatoes & cook for 3-5 mins add the chicken stock mix add two teaspoons (or more to your taste) of paprika cover the pan and simmer gently, (dont let the food boil) for 20 mins or until the potatoes are cooked when youve plated the dish sprinkle a little of the chopped parsley/coriander over each one I have a large fry pan that didnt come with a lid, so I use a big stockpot lid or you can cover with a pre-made alfoil cover, DONT attempt to cover with foil when the pan is hot. 23.01.2022 this is a quick, easy dipping sauce for tempura, dumplings, goyza etc., it has a rich depth of flavour and warmth, youll need soy sauce, light agave nectar (Co...les, Asian stores), fresh lemon, spring onions, and smoked paprika (Spice and Co. @ Harris Farm) 3 tablespoons of soy sauce 2 tablespoon agave nectar 1-2 tablespoons fresh squeezed lemon (try one tablespoon first and then add to your taste) 1 flat teaspoon smoked paprika 1 1/2 tablespoons fresh sliced spring onions combine in a dipping bowl and serve
21.01.2022 APRICOT AND CHILLI CHUTNEY I dont know about you but personally chutneys full of sugar taste yuk to me. After all a good chutney should enhance your food not overwhelm it with sugar. What I like about this recipe, apart from the fact its so damn easy to make, is that you can make it anytime from dried ingredients. The original recipe was in an old cookbook I found in the Fisher Library and probably dates back to the Raj. As ever I couldnt help but tweak it for modern ta...stes and ingredients. When using chutney just use a scrape, after all its purpose is to enhance the taste of your cheese, cold meat etc.. Coconut sugar is essential to use in this recipe, both for flavour, its ability to thicken, and as cane sugar is too sweet and to my taste acidic. Coconut sugar is available at Coles/Aldi/Woolworths. Please use apple cider vinegar both for flavour and its nutrient value. As ever use gloves or disposable gloves when handling chilli, you really DONT want to accidentally rub you eyes after using them. You will need: a medium to large saucepan, a good knife, chopping board, clean vacuum jars (I bought mine at the Reject Shop for $2.50). The apricots must be soaked overnight in 1/3 more water than is needed to cover them. INGREDIENTS: 1cup/1/2 pound of Australian dried apricots 6 dried chilli seeded and chopped 1/2 pound or 226 grams of coconut sugar 1 teaspoon salt 1/2 teaspoon cinnamon 1 teaspoon fresh ginger (you can use dried) 2 cups of apple cider vinegar METHOD: after soaking the dried apricots overnight, keep the water the apricots were soaked in and add to the pan put all the ingredients in the pan simmer on a heat just on or below medium for 1/2 hour spoon into vacuum jars Enjoy with cheese, cold meat, smoked fish etc.. theres more to explore @ https://nurishtable.wordpress.com/

18.01.2022 Moroccan Carrot Soup This delicate, spiced soup is comforting, warming, delicious & very nutritious. Carrots are often called the perfect health food, packed with beta-carotene, fibre, vitamin K, potassium and antioxidants. I highly recommend that you use your bone broth in this recipe for depth of flavour and to boost the nutritional value of the soup. You will need: a heavy pan or saucepan, mandolin/processor/grater, a wooden spoon. Ingredients:... 380 grams of carrots, shredded 2 shallots or one small white onion 1 medium potato, shredded (Dutch Cream, Kipfler, Desiree, Coliban)* 30 grams of butter 600 ml bone broth 1 large garlic clove, minced 1/2 teaspoon fresh grated/minced ginger (the fresher the better or use Spice & Co.**) 1 flat teaspoon Moroccan Spice (Spice & Co.) 2 teaspoons sour cream 1 dessert spoon of chopped Continental parsley/parsley Method: melt the butter on a heat just off medium, when the butter bubbles add the onion and let it turn translucent NOT brown then add the shredded carrot, and potato, keep turning the vegetables as you want them softened not browned add the garlic, and ginger, and Moroccan Spice, keep turning the mix for another 5 mins take the pan off the heat and lower the heat to very low, if needed add a flat teaspoon of butter put a cover on the pan and let the vegetables melt to a thick puree pour bone broth over the vegetable mix and gently simmer for 15 mins taste, add salt and pepper to taste, I prefer white pepper with this soup If you like your soup rustic you can just ladle it into the bowls. If you like a smooth soup use your hand blender to blend the soup (in the pan) to a smooth puree. Mushrooms are rich in B vitamins, & if you put them in the sun for a day the mushrooms will soak up vitamin D. 15.01.2022 I dont use NURISH to promote products per se, however Lion Pizza Base Mix (available at Coles) is brilliant. It makes an absolutely gorgeous Pizza base. I dont care much for the tomato sauce sachet and use Teresas Tomato Sauce instead, (recipe here under sauces). It only takes about 35 mins to make a gorgeous homemade pizza with toppings like buffalo mozzarella/Italian sausage/olives/ham etc, and everyone at home can join in making the pizza. 13.01.2022 semolina makes a beautiful breakfast, and this version is just so damn good you have to try it (semolina is the hard grain left after milling wheat) its high in protein and this recipe is delicious (again for those of you who freak out over dairy these small quantities are not going to make you fat, a brisk walk to the bus will burn off any calories) Ingredients:... 1/2 cup of semolina (for two) 1 1/2 cups milk I knob of butter a small round slice of rockmelon 5/6 blueberries two or three strawberries per bowl drizzle of cream drizzle of honey Method: take a small knob of butter, about 2 flat teaspoons melt in a pan add 2/3 thirds of a cup of dry semolina using a wooden spoon stir until you have what looks like breadcrumbs add 1 cup of milk stir until smooth place in a bowl and add the fruit, honey, cream
12.01.2022 HERB SALT Herb salt adds a delightful burst of flavour and fragrance to dishes, especially hot dishes. And its so incredibly easy to make. Thyme, Lemon Thyme, Lemon Myrtle, Rosemary, Sage, Oregano are some of the best herbs to use. I take the fresh herbs and wrap them in paper towel to dry out for a day or two. The herbs dont have to be completely dry as the salt will do the rest. Herb Salt makes lovely presents when packed into little jars. You will need: paper towel, sal...t, preferably sea salt crystals or rock salt crystals*, a grinder/mortar & pestle/sharp knife, small jars** Ingredients: rock salt or sea salt crystals fresh herbs such as lemon myrtle, thyme, rosemary, sage, lemon thyme, oregano Method: take the herbs, cut off any damp or damaged ends, leaves etc. wrap in paper towel and let dry for at least three or four days gently rub the herbs to release the small leaves or tear away larger leaves from the woody stems place all in the grinder or mortal and pestle and grind finely pack into jars *rock salt has a harsher flavour than sea salt so only use it if you like it **K Mart have an inexpensive coffee grinder ($AU13) that I use ONLY for herbs and spices, (DONT use for coffee), The Reject Shop has lots of useful small jars for only a couple of dollars

12.01.2022 CHINESE STYLE PORK FILLET STIR FRY Pork Fillet is one of the leanest, tastiest, tenderest parts of the pig. It marinades quickly (2 hours will give it flavour) and tastes even better marinaded overnight or marinade before going to work to cook that night. Serve with Jasmine rice for an authentic Chinese touch. You will need: a sharp chefs knife, chopping board, bowl to marinade, cling wrap to cover the bowl, paper towel, a frying pan or wok. Marinade:... for a 350 gram pork fillet, marinade at least 2 hours 2 tablespoons good soy sauce 1 flat teaspoon sea salt 1 flat teaspoon Spice & Co . Allspice 1 tablespoon mirren, agave, or honey 3 teaspoons sesame oil Ingredients: 2 shallots or small white onions (you can even use the ends of spring onions but dont use brown onions) 2 medium cloves of garlic 350 grams of marinaded pork fillet 300 grams of green beans 300 grams of brown mushrooms, sliced 1 flat dessert spoon of cornflour 1 cup good stock or bone broth 1 1/2 teaspoons light soy 1 tablespoon fresh chopped coriander Method: take the pork fillet from the fridge place paper towel on a plate and let the pork sit on it to come to room temperature slice into 2 cm disks dissolve the cornflour into the stock slice the onions or shallots into fine slices finely mince the garlic top and tail the green beans and slice into 3cm lengths on an angle remove the woody stem from the mushrooms and brush off any dirt with a cotton towel or paper towel slice finely heat the oil in the pan or wok to a heat just above medium hot add the onions and quickly stir fry for 2 mins add the beans and fry for 2 mins add the pork and let it brown but keep tossing the ingredients (you dont want them to stick) add the mushrooms, toss well add the garlic, toss well with the ingredients so it doesnt stick 1 min at most stir the cornflour mix and add to the pan add 1 teaspoon light soy sauce the sauce should thicken fairly quickly To serve use a large spoon to place the rice on the plates or in bowls, Spoon over the stir fry and sprinkle with fresh coriander. Pork fillet has very low calories and virtually no fat, and about 22 grams protein. Bon Apatite!
10.01.2022 Ive always been a coffee bean person, going back so many years I cant remember, just wanted to share that Aldi now have beans from Honduras & Columbia, and th...e beans are OUTSTANDING!, using an electric coffee mill from KMart that cost about $10 the fresh ground coffee smells fantastic, you can control how strong or mild you want the coffee and the grinds are recyclable, the taste is creamy, rich, aromatic and utterly delicious and at $12 a kg compared to most at $22 the savings are huge, a 1 Kg bag makes about 5 Kg of ground coffee, and always remember coffee is full of volatile oils so to keep flavour and freshness keep both beans and ground beans in the fridge See more
10.01.2022 Many of us are slowing down on the alcohol but want a sophisticated, fun drink. I found this Grapefruit Fizz in an old Italian cookbook from the 1950s and zooshed it up. You will need: lemon, vanilla sugar, ice, pink grapefruit, Bitters, (optional), Bickfords Pink Grapefruit Juice, and tonic water, a mixing jug (K Mart have lots) and juicer or citrus reamer GRAPEFRUIT FIZZ... Ingredients: 1/2 ripe, pink grapefruit per person 1/2 cup chilled tonic water 1/4 teaspoon vanilla sugar per person 1/2 teaspoon lemon juice per person 1/2 teaspoon Bickfords Pink Grapefruit Cordial 2 - 3 drops Bitters ice cubes spring of mint, slice of lemon to decorate Method: combine all ingredients in a mixing jug and decorate with the mint/lemon slices

The humble potato contains traces of iron, calcium, magnesium, zinc, has no fat or cholesterol, and provides energy. 03.01.2022 This is a deceptively simple salad packed with crunch, tang, flavour and nutrition, I made it last night, after not making it for a while, and it was so good!, top with strips of pan fried chicken thigh or cooked chickpeas for a complete meal. 30 SECOND SIDE SALAD Well not quite 30 seconds, but the alliterations nice and this is a really quick salad. Ive used some Pacific Rim influences in this recipe like Mirin. Mirin is fundamental in creating the particular Asian ins...pired sweet and sour taste that gives zest and tang to this deceptively simple salad. If your allergic to peanuts/nuts try sesame seeds for a little crunch. Iceberg really is the only lettuce for this crisp and crunchy salad. And just on the quiet Id like to tempt people back to this crisp, cool, crunchy lettuce which has been overshadowed by its fancy cousins. This recipe for four. You will need: a mandolin if you have it or a box grater or grater, a very sharp knife, a cutting board and a salad bowl or plate. Ingredients: 1/2 -3/4 fresh Iceberg lettuce 4 baby carrots or 2 medium carrots 1 ripe, but firm, small avocado 1 2 medium or small Lebanese cucumbers 2 dessert spoons of Mirin 2 dessert spoons of fresh lemon juice 1 flat tablespoon of chopped salted peanuts or sesame seeds small bunch of sprouts, the tops of snow pea sprouts are best salt and pepper to taste Method: put the 1/2 Iceberg, cucumber and carrots in the freezer for 2-3 mins peel the carrots, top and tail the cucumber, remove the white woody parts of the Iceberg lettuce using the mandolin or grater shred the carrot using the knife cut the cucumbers into matchstick size slices using a sharp knife shred the lettuce slice the avocado into fine slices add the bean sprouts pile the lettuce, cucumber and carrot in a bowl or on a plate mix gently with your hands place the avocado on top sprinkle with the peanuts sprinkle with Mirin sprinkle with lemon juice salt and pepper to taste This side salad is ideal for pairing with a piece of cooked fish, meat, a vegetarian patty or just about anything you fancy. 03.01.2022 PERSIAN FETA My food crush at the moment is Persian Feta. Silky, tangy, salty, sweet, creamy yum!. Some Persian Feta s have a lot of herbs in the jar, I prefer fewer herbs. An important tip to remember is that when youve used some of the cheese and are returning it to the fridge it must be covered in oil, otherwise it will go moldy. You can top up the oil with mild olive oil, however olive oil will set and turn cloudy. Theres nothing wrong with it, it just doesn...t look that nice, and you have to let it come to room temperature before taking out the feta. A vegetable oil is better, like canola or sunflower. The Persian Feta Ive found that suits me in taste, and most importantly in price, is Aldis Persian Feta.* This little recipe makes a gorgeous snack. 01.01.2022 I dont know about you but personally chutneys full of sugar taste yuk to me. After all a good chutney should enhance your food not overwhelm it with sugar. What I like about this recipe, apart from the fact its so damn easy to make, is that you can make it anytime from dried ingredients.
