20.01.2022 Weekend magic Spinach & Tomato Frittata Serves 4: 77cals 14p 3c 2f Ingredients:... 16 egg whites or 8 whole eggs 62.5 g unsweetened almond milk or milk of choice 60 g baby spinach 149 g cherry tomatoes sliced 1/2 tsp onion powder 1/2 tsp garlic powder salt and pepper to taste Instructions 1. Preheat the oven to 190C 2. Cut a round piece of parchment paper and place in the bottom of a round baking dish. Spray the bottom and sides with coconut oil spray. This prevents the eggs from sticking. 3. Place the egg whites, milk, spinach, onion powder, garlic powder, salt and pepper in a bowl and whisk together. 4. Pour the ingrdeients into the prepared baking dish. Smooth out the spinach with a spatula so it does not clump. 5. Arrange the sliced tomatoes in an even layer in the egg whites. 6. Bake at 190C 30 minutes or until the center is set. Remove from the oven and cool in the pan 7-10 minutes. 7. Slice into servings and serve immediately or store in meal prep containers. 03.01.2022 I used to think that crepes were difficult to pull off. You know, light, fluffy, and airy . It actually is and here is a simple recipe you to give you the confidence to make this special treat any day of the week! This is how I do it: Ingredients 2 large eggs 1/2 cup unsweetened almond milk or milk of choice... 1/4 cup water 1 tsp vanilla extract 1 tbsp pure maple syrup 1/4 cup whole wheat pastry flour 1 tbsp coconut oil melted, plus more to lightly grease pan Instructions 1. In a large mixing bowl, whisk together all the ingedients. 2. Heat griddle or skillet over medium-high heat, and lightly grease with coconut oil. 3. Ladle of the batter onto the hot pan, and gently rotate the pan to get the batter to spread thinly over the entire base of the skillet. The thickness should be that of a tortilla, not a pancake. 4. Cook on low to medium heat, flipping as needed until cooked. 5. Place the cooked crepe on a plate, add your favorite fillings, and either roll up like a burrito or fold into quarters.
