07.01.2022 Easiest Way to Cook Eggplant Eggplant can be too oily when fried but steam frying is easy and reduces fat content. 1. Heat about 1 tbsp olive oil. 2. Add sliced eggplant. 3. Add about 1 tbsp water. 4. Put lid on and cook on lowish heat for around 25 mins. Great stored in fridge and added cold to salads or as a veggie side dish when you haven't got time/energy to cook.
