22.01.2022 Mental health and well-being foods: Add colour to your diet:The saying ‘we eat with our eyes’ has a lot of truth behind it! When we are excited by our food, it instantly makes us feel good about what we are eating. This can have a positive knock on effect on our digestion. Mindset aside, bright coloured foods such as veggies, fruit, and herbs and spices all contain potent phytochemical compounds, which exert an antioxidant impact in the body, linked to improved mood. My top ...colourful mood supportive foods are: berries, turmeric, saffron, broccoli, sweet potato, red cabbage and kale. Drizzle or top with fats I think its safe to say most of us now know healthy fats are important for a good mood. In addition, a lot of the vitamin and antioxidant compounds, found in the foods we eat, such as sweet potato, carrot, kale, spinach, turmeric, tomatoes, beetroot, corn, broccoli etc, require fat in order to be absorbed and utilised by the body. This means, if we aren’t eating adequate fat with each meal containing these foods, we can miss out on the benefits! A simple way to overcome this is to drizzle or top each meal with a bit of healthy fats such as extra virgin olive oil, hemp seed oil, flaxseed oil, avocado, nuts/seeds or nut butters and tahini. Eat a healthy breakfast The breakfast we consume can make or break the rest of our eating habits. Unfortunately, a breakfast high in refined carbs and sugars can lead to a ravenous appetite throughout the day and energy crashes which leads us to more refined sugar and carbs as a pick me up! Instead starting the day with a breakfast rich in healthy fats, protein and fibre helps to regulate appetite and balance blood sugar which both support mood. 20.01.2022 Quick eggplant dip: Ingredients: 1 eggplant, pierced 2-3 garlic cloves, skin on, removed on roasted ... -1 cup mushrooms 1 tsp sea salt 1 tsp pepper 2-3 extra virgin olive oil 2-4 fresh herbs (coriander) washed Method: Pre-heat over 180C. Add all ingredients, apart from coriander, into a pan, bake for 20-30mintes. Place in blend, blend till desired consistency add coriander. Store in a jar till ready to use. 18.01.2022 My favourite meal of the day would definitely be breakfast , it’s the fuel I need physically and mentally. For me a breakfast high in good fats and protein is a winner not only for fullness but for my blood sugar levels. Walnut and Tomato vegan pasta sauce with mung bean noodles Serves 4 Pre: 10min Cook: 20min Ingredients 1 packet mung bean noodles 1 cup walnuts 1x 400g tinned chopped tomatoes 6 Roma tomatoes, skin removed and finely chopped 1 onion, finely chopped 3 garlic cloves, crushed 1 tbsp. extra virgin olive oil 2 tsp. fresh chilli 1 tsp. oregano, finely chopped 14 cup fresh basil, finely chopped 14 cup fresh parsley, finely chopped 1 tsp. lemon zest Sea salt and pepper to taste Method Place walnuts in a food processor and pulse until just crumbled. In a large saucepan add a little olive oil, and sauté onions, chilli and garlic. Add the fresh tomatoes, tinned tomato, lemon zest, herbs and seasonings. Bring to a boil and then reduce heat to a simmer, cook for 10-15 minutes. Add walnuts to the tomato sauce. Cook mung bean noodles according to packet directions. 10.01.2022 Gluten and lactose free apple and cinnamon pancakes topped with chocolate nut butter and banana, this recipe is super healthy, packed full of protein and filling, my 6 year old loves them. Ingredients: cup LSA cup almond meal... cup wholemeal flour (or your choice of flour) 3 eggs cup grated apple 1-2 tsp. cinnamon 1-2 tbsp. Coconut sugar, raw honey or maple syrup Banana and chocolate nut butter of choice, for topping Method: In a bowl combine LSA, almond meal, flour, cinnamon and eggs, gently combine. Add a little water, if needed, to thin consistency. Heat a pan to medium heat, melt a little virgin coconut oil or extra virgin olive oil. Pour cup of batter, cook till small bubbles form in the middle, flip and cook for 1-2mins longer. Repeat till all the batter is used. Top with chocolate nut butter and sliced banana. Hope you enjoy the below Christmas recipe, whi...ch is a family favourite of mine xo Lemon Myrtle Roasted Chicken with Desert Lime Stuffing Serves: 6 Pre: 10-15 minutes Cooking: 60-90 minutes Rub Ingredients: 1 size 16 organic chicken, trimmed 2 tbsp. ground lemon myrtle 1 tbsp. dried marjoram 2 tsp. sea salt 2 tsp. pepper 2 tbsp. EVO oil Stuffing Ingredients 3 slices multigrain bread 1 small Spanish onion 1 egg 4 tbsp. EVO oil 1 tbsp. seeded mustard 2 tsp. sea salt bunch flat leaf parsley, washed 4 limes, cut in half Method Preheat oven to 180C. In a small bowl mix together all of the rub ingredients, then rub evenly over the chicken. In a food processor add all of the stuffing ingredients, except for the limes and blend to a rough consistency. Use latex gloves to stuff the chicken. Place the chicken on a wire rack in the baking tray and pour -1 cup water as this will increase the juiciness of the chicken. Place the limes in the roasting pan with the chicken. Place the chicken in the oven for about 60 minutes. To test if it is cooked, stick a skewer into the chicken and the juice should run clear. Serve alongside a leafy green salad, enjoy!
04.01.2022 I love mushrooms, theycontain antioxidants, are the perfect meat substitute and they are so versatile. Curried Mushrooms Empanadas Ingredients... 1 tbsp. extra virgin olive oil 2 finely garlic cloves, chopped 2 tsp. ginger, finely grated 500g button mushrooms, diced 3 spring onions, sliced finely bunch coriander, chopped cup water or vegetable stock tbsp. Curry paste 1 kaffir lime leaf, torn 1 long red chilli, chopped 2 tbsp. lemongrass, chopped 1 tsp salt 4 mountain bread wraps Extra virgin olive oil, to brush 1 egg yolk, to brush Preheat oven to 200C Heat oil in wok or large frying pan, stir fry garlic, ginger, red chilli, spring onion and lemongrass on medium heat for less than a minute. Add curry paste and kaffir lime leaf. Stir fry for a further minute. Add mushrooms, coriander stalks, water/stock and salt. Stir well. Reduce heat and simmer covered for 15 minutes or until mushrooms are tender and all liquid has been absorbed. Remove from heat, stir through coriander leaves and set aside. Place the mountain bread on a baking tray. Fold it in half, into a triangle and brush with olive oil. Place 2 heaped tablespoons of the mushroom mixture into the centre of the mountain bread, brush the edges with olive oil and fold into smaller triangles to enclose the filling. Press the edges together, and place sealed-side up on a lined baking tray. Repeat with remaining mushroom mixture.
