Method: Place all ingredients in a food processor and blend until combines. Roll into balls, makes around 15 and place In the fridge to harden up. Store in the fridge for up to two days or freeze for up to one month.



22.01.2022 Earthy beetroot and citrus salad. I use whatever is in season hence the limes off my tree, and we all know how important citrus is at the moment. The greek yoghurt which is totally optional, with the warmed honey dressing cuts through the citrus beautifully. I love Beetroot it's such a healthy vegetable, and despite its sweet taste it has a surprisingly low impact on blood sugar. They also have vast amounts of antioxidants, fibre, folate and potassium. 22.01.2022 Chargrilled asparagus, basil pesto and cherry tomato. Super easy salad and so delicious. All I do is blanch the asparagus and then chargrill on the BBQ. I use a couple handfuls of basil, 1/2 cup fresh grated Parmesan cheese, 1/3 cup toasted pine nuts and 1 clove garlic. Blitz together then drizzle in olive oil until a smooth consistency, and finish with a squeeze of lemon. Cut up some cherry tomato’s and there you have it. I go a bit overboard with the pesto but it flavours your whole meal.... 17.01.2022 ‘Purple carrot hummus’ Don’t underestimate the power of the purple carrot, they are not just uber cool but compared to their orange friends they are higher in beta-carotene and phytonutrients. Scout around for these guys their health benefits are amazing. - purple carrot hummus. Ingredients: -1 can drained chickpeas - 3 medium purple carrots - unpeeled chopped and steamed- you can get these from markets and organic stores. - 2/3 cup hulled tahini - 2 lemons with the juice and... the zest. May adjust if more is needed. - 1 tsp cumin, I use the seeds and crush them in a mortar and pestle.. they taste better and fresher. - 2 medium cloves garlic minced. - 1 tsp sea salt. - 1/3 cup olive oil. - method. - combine all ingredients in the blender, apart from the olive oil, add that last and drizzle in after other ingredients are chopped up, then it will come together a lot creamier. - taste as adjust seasoning as required. 16.01.2022 For those who wanted the recipe to the Chilli Jam ...Here it is. It's easy just a bit of stirring and let it slowly reduce. Ingredients: 8 red peppers deseeded and roughly chopped... 10 red chillies roughly chopped 1 Tablespoon of fresh ginger peeled and roughly chopped 8 garlic cloves peeled 400 g tin cherry tomatoes 750 g golden caster sugar (normal caster sugar will do if you cant find the golden) 200 ml red wine vinegar Instructions: Put your jam jars through the dishwasher to sterilise. I then wash them thoroughly with hot water and place in hot oven about 180 for 5 min. Dont put the lids in, just let them dry upside down after washing. Don't leave jars any longer in the oven, they will crack if left too long..them to cool on tray with baking paper lid side up. Chop the peppers, chillies (with seeds), ginger and garlic by hand or in a food processor until finely chopped. Pour into a pan and add cherry tomatoes, sugar and vinegar, then bring to the boil. Skim off any scum that comes to the surface, then turn the heat down and let it bubble gently for about 60-90 mins, stirring occasionally. I only needed an hour but try not to be impatient, you can tell when the bbbles reduce and it has reduced by 2/3rds. Stir more frequently during the last 20 mins or so, just to ensure it doesn’t catch and burn. The jam should thicken during this time, but will still be pouring consistency (about the consistency of tinned tomato soup). It can be cooked for longer if it still looks very thin (but it will thicken more once cooled). Once the jam reaches this stage, leave to cool for 20 mins or so and then carefully pour into the sterilized jam jars and leave to cool completely. Notes This jam will keep for 3 months in a cool, dark cupboard refrigerate once opened.

16.01.2022 One of my favourite salads ... green beans, spinach, broad beans, asparagus, broccolini, avocado, black sesame seeds and pomegranate. Firstly I blanche all the greens and de pod the broad beans and dry on some paper towel. Then cut 1/2 an avocado, 1/2 a pomegranate, black sesame seeds and fresh mint and mix together. I add a simple dressing of olive oil, organic honey, Dijon mustard, apple cider vinegar and a clove of garlic. The dressing is 1/4 cup tahini, 1 tsp organic honey, I clove of garlic crushed, a squeeze of one lemon and a pinch of salt. 01.01.2022 As promised chicken soup recipe.. TRy to buy as muh organic as you can...worth it. INGREDIENTS 1 tablespoon olive oil 1 large onion diced... 4 cloves garlic minced 2 large organic carrots chopped 1 tsp tumeric or 1 thumb size of fresh tumeric peeled and grated in. 2 stalks organic celery chopped 4 skinless chicken thighs, bone in preferably. I actually use an organic chicken carcass first, with the extra thighs to develop more flavour, then take it out at the end of cooking. 2 (litres) organic chicken stock or chicken bone broth 2 fresh corn kernels, kernels cut from the cob (120 g) baby spinach leaves I also put in a big handgulof fresh silverbeet or chard, butuse what you have in the fridge it dosent matter what veg, but just get the carrot and celery in there. 1/2 (litre) of water, as needed (200 g) Noodles, I use udon noodles and lightly pre cook in boiling water then sit in a dreainer until ready. (follow packet instructions) Salt and pepper, to taste (nice pich pink himalayan sea salt is what i use. 1/4 cup fresh parsley, finely chopped INSTRUCTIONS Heat oil in a large pot over medium heat. Cook onion for 2 minutes, then add garlic, celery and carrots; cook for 5 minutes. Add the chicken thighs, broth (stock), and corn kernels. Top up with water if needed to cover all of the ingredients. Increase heat and bring to a boil for about 4 minutes. Reduce heat, partially cover the pot with a lid, and allow to simmer for 20 minutes or until the chicken is cooked through. Transfer chicken and carcass to a plate and shred the meat; discard the bones. Add the chicken back into the soup along with the noodles. Cover and cook for 6-8 minutes while stirring occasionally to separate noodles. Stir in the spinach leaves and silverbeet if using and allow to wilt in the soup (about 3 minutes, pressing leaves into the liquid with the tip of a wooden spoon). Mix parsley through. Season with salt and pepper, to taste. Serve warm.
