22.01.2022 7 Days of Carrots Day 5: Carrot & Broccoli Tabbouleh Eating this took me back to my childhood when Mum would prepare traditional fried rice with egg, peas, day old rice, and if we were lucky some diced leg ham leftover from Christmas. The recipe contains none of those ingredients, but it has the same soft fluffy texture plus veggie crunch. All you need are carrots, broccoli, onion and quinoa. Quite a bit of grating and chopping (I didn't use a blender) but so easy to cook.
22.01.2022 7 Days of Carrots Day 4: Fathers Days Roast Carrots The usual roast carrots were not going to cut it today. So I tossed a can of chickpeas with Moroccan spices, put them on a tray in the oven for 40 min, then added them to the roast carrots. Sprinkled with parsley and tahini sauce, and served to a happy man.
21.01.2022 7 Days of Carrots Day 7: When the supermarket shelves are bare, a little carrot can go a long, sweet way. On the weekend, when all the regular bags of carrots had gone (seriously when does that every happen?), I found one lone bag of Odd Bunch Carrots (the irregular shaped ones) to make carrot ice cream with the kids. It was either that or the one 10kg bag of juicing carrots which may have not gone down well. Not just yet anyway. So thank you Jill Dupleix for this fantastically simple carrot ice cream recipe. No ice cream machine required, just carrots, sugar, thickened cream, and orange juice. It tasted like mango, which is my favourite kind of gelato, and it was a lovely reminder of how simple things can be. If we make it through these troubled times of COVID-19, we'll always remember the day we made our own carrot ice cream.
21.01.2022 If you've been thinking about trying a new diet, here's a great intro to currently popular diets (in Australia as well as the US) togther with recipes to try. The Mediterranean diet, the number 1 golden oldie, still features as one of the healthiest eating plans, but elements of all these diets can be incorporated into a healthy lifestyle. Hint: If cooking your way through a week of recipes isn't be for you, try two days a week - with leftovers that's 4!

18.01.2022 7 Days of Carrot Day 3. No they're not chicken nuggets, or chicken satay... It's carrot gnocchi! A simple set of ingredients: carrots (small bag), flour, salt, eggs. Getting the shape right was a little difficult, but they tasted like gnocchi and not carrots, so very happy to have leftovers for lunch tomorrow.
13.01.2022 7 Days of Carrots Day 6: If you can't eat it, drink it. You may have noticed that last week was declared a no carrot week. On the home front, carrot fatigue was building fast and to be honest I just couldn't summon the enthusiasm for more carrot. So this week I found inspiration from this recipe for Spicy Thai Carrot Soup by Marzia at littlespicejar.com. To save time and energy, I simplified the recipe to carrots, onion, garlic, ginger, curry paste and coconut milk. It was declared the best carrot dish so far! This week I'm going hunting for carrot desserts. Only one more carrot day to go :-)
12.01.2022 What's sunlight got to do with COVID-19? A little sunlight each day stimulates your body to produce vitamin D which can play a major role in supporting your body's response to infection - including viruses. So whilst it might be tempting to stay indoors right now, don't forget to put a little sunshine in your life each day. 5 to 15 minutes each day should be enough. Your mood and bones will also thank you for it! If however you're not able to do this, some foods and supplements can help. Stay posted for more information from me this coming week. In the meantime, take care and have a safe weekend everyone.
10.01.2022 Ok, so the only real defence from COVID-19 is to avoid exposure and use sterile techniques. But after that? Try to stay healthy and support your body's own defence mechanisms, including the moist, mucous membranes lining your nostrils, mouth, throat, and elsewhere, by staying hydrated. In most situations, 2-3 litres of fluid a day is recommended for a healthy adult. However if you're highly active, unwell or have a medical condition your needs may differ, so please seek med...ical advice. (Having more fluid than you need - or toilet paper! - doesn't help.) Hope you all have a safe and healthy weekend, and stay hydrated :-)
08.01.2022 There is a tidal wave of online courses out there now, but if you know anyone interested in the basics of Food As Medicine, FutureLearn is offering a free online course. It's facilitated by Helen Truby, Professor and Head of Department of Nutrition & Dietetics at Monash University.
07.01.2022 A little good news. Telehealth services are now more widely available under temporary COVID-19 measures. Which means that starting from tomorrow, if you have a Chronic Disease Management Plan then your dietitian/allied health session will be able to be conducted over the phone or via video link instead of face-to-face, and you'll still be eligible for bulk billing or a Medicare rebate (depending on your health provider). Throughout the COVID-19 period, I'll be offering bulk b...illing (no gap payment) to new and existing clients who have a CDMP referral from their GP. I'll be able to offer this service to people who live across Sydney as well as people in rural or interstate areas who are experiencing difficulties accessing dietitian services. Telehealth won't always be a good option for everyone, and in most cases I prefer a face-to-face initial consultation. But whilst we're trying to minimise social contact during COVID-19 it's a good option. Maintaining your health is perhaps harder and more important then ever before. But it's essential.
