22.01.2022 This is my high fibre, healthy twist on traditional banana bread ... CINNAMON FRUIT MUFFINS are great to pack in the school lunch box or to take to work for that 3pm snack attack enjoy . . Ingredients ... 2 1 5 medium / large 1/2 cup olive oil 2 1 cup wholemeal sr flour 1/2 cup brown sugar 2Tbs chia seeds 2tsp ground cinammon mixed seeds and grains to top mash up fruit, mix all ingredients together and place in greased muffin tray. The best tip I can give you is to just make your family meal and puree it . . Dont worry about trying every single ingredient individually because the reality is... you dont eat it like that. . . Worried about ALLERGIES? Stick to the high allergen foods on their own the first few exposures and once you are confident that there isnt a reaction, continue mixed into meals - the way you would serve it for yourself. . . Try to pack as maaaanyyy veggies into your meals as possible too! This casserole has zucchinis, carrots, potato, mushrooms, tomato (cherry and pulp), garlic, spinach, a load of herbs and spices, 1/2 and olive oil with a half leg of lamb... slow cooked to perfection . . I always op for wholemeal because of the fibre, but if you generally have enough fibre in your diet then no need to switch . Is pasta bad for blood sugars? No. Wheat pasta is low Gi. Low Gi carbs digest slowly and cause a steady rise in blood glucose levels BUT having too large a portion of pasta (or any other carbohydrate) can affect your blood sugars portion size is key . Should we cut out carbs like pasta when trying to lose weight? Not necessarily, reducing your portion of carbs, as well as fats and protein is a good idea and boosting your non-starchy vegetable intake instead is a good strategy. E.g. add a side salad or zoodles. Remember "low carb" does not mean "no carb" and wholesome carbohydrates offer fibre, vitamins and minerals - not just energy . Should we switch to low carb pasta when trying to lose weight or manage diabetes? If you like to eat large portions and have difficulty with portion control, these products can be reall handy, however they tend to be quite expensive so aren't too cost effective . White sauce or red? On a regular basis, red but occasionally having a white sauce is a pleasant change, a third option for variety is using a yummy pesto . This creates a deeper connection with fresh food and can lead to a healthier life. I was lucky enough growing up that my parents had a massive veggie garden , herbs & spices and fruit trees that my 3 sib...lings () and I "helped" (played) with in the garden. I fully intend to do the same with my little bub I went to a public high school that had its own agriculture farm in Sydney and thought it was the norm for all schools to teach us how to grow broccoli or hatch chicken / duck eggs until I went on to uni and my classmates hadnt. 14.01.2022 & ricotta pie . . So if you made my apple puree, keep the peels you sifted out for the baby food and mix them back in to the leftover apple puree. Do not throw away all that wonderful fibre! .... . ? ? Like I said in my previous post, I dont use green apples in my desserts. I prefer to use sweeter fruits and use absolutely no sugar instead. . . I always have pastry on hand, it is the easiest way to transform leftovers into something else! . . For pie: - Core and slice apples - place in a pot with 1 cup of water - add cinnamon (optional) - simmer until softened - let mixture cool - lay out a sheet of pastry on a greased baking dish - fill with half of apple mixture - mix remaining apple mixture with 1 cup light ricotta and cinammon - dolop evenly on top of puree layer - lay another pastry sheet - bake at 180 degrees for 45mins or until pastry is cooked and golden - serve warm, optional with 1 small scoop of low fat icecream . . Processed meats include salami, bacon, hams, jerky, canned meats like spam and even meat sauces like gravy! . . Further cooking of these processed meats produces more chemical compounds such as heterocyclic aromatic amines and PAH The more of these compounds we consume, the greater the impact on our health and cancer risk. . . We dont yet fully understand the mechanism behind these compounds in increasing cancer risk but we do know that individuals who follow a healthy diet and avoid processed or excess meat consumption (and ultimately a lower intake of these chemicals) have a #lowerrisk of developing cancers and often achieve better overall health . . People ask me why I dont use green apples in my desserts. I prefer to use sweeter fruits and use absolutely no sugar instead. Keep the peel in cooking too! There is so much goodness in them and during cooking these pectins, antioxidants and fibre will come into the puree, even after sifting out the peels! . . 04.01.2022 + . . Beef & mushroom pies. Made from leftover soup. All I did was:... Simmer down the soup In a separate pan added 700g mushrooms, paprika, pepper and a dash of salt. Once cooked pour soup into pan (I added it in 2 batches, too much for one go) with 2tsp of plain flour and mix through Simmer until thickened, add 1/2 cup grated light tasty cheese and stir through. Place in pastry thats set up in a pie tray and bake until golden. Serve with mashed peas and corn, dressed with truffle oil (being a bit fancy ) . . I hate, hate, hate food waste. I dont think that any living creature should lose its life to end up in the bin. . . Dont get me wrong, I am not a vegan. I eat animal products as part of a largely plant food diet, in line with the Mediterranean diet principles. . . I am just completely % against food wastage. . . Pies are great, you can use almost any food leftovers as the filling. 03.01.2022 I thought I would share this moment with you all. Yesterday we flew back from my sisters wedding (congrats again @claire.fassoulidis & @pete_laga ) . . The passenger next to hubby felt the need to ask him about his snack choice (already approved by me) and then proceeded to tell him she was a naturopath. .... . The feeling you get here is similar to that of if another woman makes moves on your man! . . Not only was this unwarranted but it was also very awkward when he proceeded to tell her hes fine, hes married to an #accredited #practising #dietitian (who was sitting right next to him!) . . She politely smiled and turned away for the remainder of the flight . . Why didnt she want to chat after that? Was she just looking to snag in a gullable client who obviously knew better? . . MY QUESTION If fake health professionals turn away and recognise that dietitians are the experts in nutrition, why doesnt everyone else? Why is it so easy to turn to unqualified, under skilled individuals for dietary advice? And then end up seeing a dietitian after these fakeys drain your patience and your wallet? . . Which unfortunately by the time they come through to us they are a lot worse off to where they started after lengthy periods of incorrect, expensive and extreme advice given . . . Dietitians food. We are NOT food police we are scientists , health professionals , highly educated and have inner chefs . We are trained to help, not to sell. . .
