24.01.2022 We know Monday’s can be hard, so we thought we’d share another one of our smoothie recipes to make it a little easier. Our Hulk Smoothie is dairy-free, vegan and high in potassium. Also contains Vitamins A, B1 and B2, the Hulk Smoothie is a really great way to get your nutrient fix during the day, no matter how old you are! All you’ll need is: ... 1 cups of water 1 Apple, cored 1 Banana 1 Cup of Baby Spinach Leaves To make, you simply need to: 1. Cut the apple into four pieces (if your blender is not strong, you may need to peel the apple too). 2. Peel the banana and pull it apart into four chunks. 3. 15.01.2022 There’s nothing easier than bringing out the slow cooker to prepare wholesome winter warmer dishes that everyone will enjoy. Try this Beef & Vegetable Curry recipe for an easy set-it-and-forget-it meal. Ingredients: 2 tablespoons rice bran oil 1.25kg gravy beef, trimmed, cut into 3cm cubes... 2 medium brown onions, halved, sliced 1/2 cup korma curry paste 750g Lady Christl potatoes, unpeeled, cut into 2cm cubes 1/2 (550g) cauliflower, cut into small florets 2 x 400g cans diced tomatoes 1 cup Massel beef stock 1 cup frozen baby peas Steamed basmati rice, to serve Plain yoghurt, to serve Chopped coriander, to serve Method: 1. Heat half the oil in the bowl of a 7-litre slow-cooker (see note) over medium-high heat. Cook beef, in batches, for 3 to 4 minutes or until browned all over. Transfer to a plate. 2. Heat remaining oil in slow-cooker bowl over medium heat. Cook onion, stirring, for 3 minutes or until softened. Add curry paste. Cook, stirring, for 1 minute or until fragrant. Add potato, cauliflower, tomato and stock. Return beef and juices to the bowl. Season with salt and pepper. Stir to combine. Return bowl to slow-cooker. Cover with lid. Turn cooker on low. 3. Cook for 8 hours or until beef is tender, stirring halfway during cooking. Stir in peas. Serve with rice, yoghurt and coriander. Recipe: Taste.com.au

08.01.2022 Looking for something new to make this week for dinner or lunches? Why not try our grilled chicken and roasted carrot salad with spiced yoghurt dressing? This one was a hit at our workshops with Carer’s Tasmania, so we thought we would share it here! This recipe serves two, so it’s perfect for lunches or dinner and is easy to adapt for more people if needed. Ingredients:... 1 x large or 2 x small chicken breasts or thigh trimmed and cut into 1cm thick slices 1 x Tbsp McCormick’s Tennessee Smokehouse spice Small bunch of baby carrots or four larger carrots peeled and cut into batons 1/2 tsp each of ground cumin, turmeric and smoked paprika and a small amount of cayenne pepper 2 x Tbsp pepitas (dried pumpkin seeds) 1 x sprig of rosemary chopped finely 1 x sprig of fresh mint rough chopped 1 x lemon 2 cups of baby spinach 4 x Tbsp of Greek-style yoghurt x can of chickpeas rinsed and drained Olive oil Method: 1. Zest the lemon and set to one side, juice the lemon 2. Roast the carrots in a hot oven in a baking tray with a drizzle of olive oil and a pinch of the chopped rosemary and turmeric. Roast until cooked through and while still hot add a dash of lemon juice and shake the tray 3. While the carrots are roasting toast the pepitas in a pan with a dash of cayenne 4. Combine the mint, paprika and cumin with the yoghurt adding lemon juice to taste 5. In a large bowl mix the chicken with the Tennessee spice and a splash of oil and BBQ or grill until cooked through 6. While the carrots are still warm combine with the spinach and chickpeas and arrange on plates to serve Add the cooked chicken, drizzle with the yoghurt mix and top with lemon zest and pepitas. We recently borrowed this protein ball recipe from Sports Dietitians Australia for a cooking class we did, so we thought we’d share it here as well! You’ll need: ... cup of chopped dried dates cup of quick oats 6 tbsp of peanut butter 1 tbsp of honey 1 tbsp protein powder cup of desiccated coconut (for coating) To make them all you have to do is; 1. Blitz the dates and the oats in a food processor 2. Add the peanut butter, protein powder and honey continue to blitz the mixture. 3. Slowly add small balls and roll the outer layer in the desiccated coconut. 4. Store in the fridge or freezer and enjoy!
