INGREDIENTS For the Bars: 1 cup (150g) toasted almonds... 3/4 cup (100g) raw pecans 3/4 cup (100g) raw cashews 1/2 cup (100g) raw pepitas 3 tablespoons sesame seeds 1/2 cup (100g) raw sunflower seeds 1/4 cup plus 1 tablespoon brown rice syrup 1 teaspoon vanilla extract 1/2 teaspoon salt INSTRUCTIONS Preheat the oven to 220C Grease an 25x25cm square baking pan with butter (or coconut oil) and line with baking paper, leaving a 25mm overhang on two of the sides to help with removing the bars once they’re set. In a medium mixing bowl, toss together the almonds, pecans, cashews, pepitas, sesame seeds, and flax seeds. In a small saucepan, warm the brown rice syrup, vanilla extract and kosher salt and stir until well combined. Pour the wet mixture into the nut mixture and stir to coat. Quickly transfer to prepared pan. The mixture is sticky! Bake for 20-22 minutes, or until the tops are just slightly golden (this can be tough to tell visually, so just trust that they firm up once cool). Allow bars to cool for at least 1 hour in the pan. Ingredients The nut mix 1cupraw almonds... 1cupraw peanuts 1cupraw macadamia nuts 1/2cupraw hazelnuts 1/2cuppumpkin seeds 1/4cupsunflower seeds 1/4cupbuckwheat groats 1/4cupsesame seeds The syrup 1/2cupunpasteurized honey 1/3cupmaple syrup 1/4tspsaltI use Himalayan salt 1tsppure vanilla extract Instructions Grease and line a 20x30cm baking pan with baking paper, leaving a bit of an overhang on both the long sides, then lightly brush the top of the baking paper with a little bit of oil. Also lightly brush a second sheet of baking paper of approximately the same size as your pan and set aside. Preheat your oven to 220C. spread the almonds, peanuts, macadamia nuts and hazelnuts onto a large baking tray and bake for 7-8 minutes, until lightly toasted and fragrant. Once toasted, transfer the nuts to a large mixing bowl and add the pumpkin seeds, sunflower seeds, buckwheat groats and sesame seeds. Set aside. When melted, add sugar. Stir briefly, then leave until the sugar mostly melts. When it starts bubbling a bit, add nuts. Stir 2 minutes. Pour out on baking paper lined tray. Spread nuts out, allow to cool. Roughly chop half, leave some whole. Plump Cranberries: Place in a bowl, pour over freshly boiled water. Leave to soak 10 minutes then drain. Apple: Drizzle with lemon juice and toss (stops apple from browning). Dressing: Place Dressing ingredients in a jar and shake well. Adjust to taste - more oil to make it creamier, sugar for sweet, vinegar for tart. Assemble: Place salad in a large bowl with half the apple slices and all the onion. Drizzle with half the dressing then toss. Scatter over the cranberries, desired amount of walnuts, remaining apple slices and feta. Drizzle with remaining dressing. Arrange 3 almonds on each Lebkuchen while the glaze is still wet.
