Hu Tieu Nam Vang Phnom Penh Noodle soup (Kuy teav) (Rice Noodle with Pork and Seafood)... 2. Vietnamese Fermented Fish & Seafood Vermicelli Soup (Bun Mam) 1. Hu Tieu Nam Vang popular noodle dish in Saigon is an influence of a Chinese-Cambodian dish called Kuy Teav. It is also known as Phnom Penh Noodle Soup. The noodle soup consisting of rice noodles with pork stock and toppings. Topping include an assembly of pork meat, minced pork, quail egg and seafood. Hu Tieu is a popular meal in Cambodia, Southern Vietnam, Singapore, Thailand and other Southeast Asian countries. It can be found at marketplace stalls, roadside vendors, restaurants across the country, and is highly regarded for its clear and soothing broth and dazzling array of herbs, aromatics and other garnishes and condiments. 2. Vietnamese Fermented Fish & Seafood Vermicelli Soup (Bun Mam) It's not surprising that not many Vietnamese restaurants serve Bún Mm. The smell is incredibly pungent but taste like heaven. Bún Mm is a far cry from Ph. A typical bowl of Bún Mm includes rice vermicelli noodles, egg plant, shrimp, squid, crispy pork belly and flaky white fish. It is often served with a plentiful platter of crunchy vegetables and Vietnamese herbs, limes and fresh chilies. What makes Bún Mm stand out from all the other Vietnamese noodle dishes is the broth. The broth is murky, salty and flavored with the granddaddy of all Vietnamese condiments, fermented fish. The use of fermented fish to flavor the broth in this noodle dish can melt paint off walls if you are not accustomed to it. Even I, a full-fledged Vietnamese, can take a second or two to get used to the smell. But once you get passed the smell, the taste is packed with umami flavor and it simply works. We can make a fantastic vegetarian dish today CRISPY SPICY SHAKING TOFU 1 block(1 lbs.)of firm or extra firm tofu( cut into cube and deep fried until crispy(8-10 min.)... 1/2 onion (cut ) 1/2 bundle of green onion (cut into 1 inches long) 3 clove of garlic (chopped) 1 tablespoon cooking oil Sauce: 1 tablespoon light soy sauce 1 teaspoon dark soy (optional, If wanted a darker color) 1 tablespoon oyster sauce 1 teaspoon fish sauce (3crabs brand) 1 teaspoon sugar 1/2 teaspoon msg(optional) 1/2 teaspoon ground pepper 1 tablespoon chili oil Mix all sauce ingredients together and set aside 1In a pan/wok add cooking oil and garlic. 2When garlic come to a golden brown toss in the onion and green onion for 30 second. 3Add sauce and cook for a minute then off. 4Toss in the tofu and mix well. 21.01.2022 Char siu fried rice anyone? I have quite a few people asking me about my BBQ PORK CHAR SIU Moist, pack with flavor and a sweet glazed covered all over. ... Simple but delicious Recipe below: 3-4 lbs meat( butt roast or country style ribs. Cut 1x2 thick 5-6 inches long) 1 pk Chinese bbq char siu seasoning mix 1/4 cup char siu sauce (Lee kum kee brand) 1 cup water 2 tablespoon minced garlic 1 tablespoon dark soy sauce Mix all ingredients well together. Put meat in and marinate. Marinate 6-12 hrs. Or overnight in the fridge. 1/4 cup char siu sauce for later use. 1Put parchment paper on the baking pan. 2Put baking rack on top of pan. 3Place meat on the rack. If you don’t have the baking rack. Just place meat on the top of parchment paper. Do not use foil wrap. It will burn because of the sugar in the sauce. 4Place meat on the middle rack in the oven. 5Bake for 40 minutes at 180 degree C. 20 minutes on each side. 6Take meat rack out. Brush char siu sauce on the meat. Put back in the oven. Bake on broil for 5-7 minutes. 7Take out and brush char siu again on the other side. Broil for another 5-7 minute. 15.01.2022 ViETNAMESE SHAKING BEEF BO LUC LAC Simple but delicious Recipe here ... 2 lbs ribeye steak ( cut into cube) 1 tablespoon oyster sauce (panda brand) 1 tablespoon fish sauce (3 crabs brand) 1 tablespoon soy sauce (light) 1 teaspoon dark soy sauce 1 tablespoon cooking oil 1 teaspoon sugar 1 teaspoon garlic salt 1/2 teaspoon msg or veggie seasoning (optional) 1/2 teaspoon ground pepper Add everything and marinate for at least 15 minutes before cooking. Veggie: 1 onion( cut into cube) 1/2 cup green onion ( cut 1 inche long) 2 tablespoon chopped garlic capsicum(optional) 1 tablespoon cooking oil While the meat is marinating. 1In a sauce pan add oil and garlic. When garlic come to a golden brown add both of the onion and capsicum. Slightly sauté. You wanted it still crunchy. Set aside. 2Turn your pan on to the highest heat. Give it a few minutes before putting in the meat. Do not reduce heat at anytime of the cooking. 3Spread meat all over the pan. Leave meat in pan for 1-2 minutes before starting to stir. 4Repeat again. Taste and adjust. When you think your meat is at the right texture you want add in your sauté onions. 5Mix well and turn off right away. Remove from heat and serve. Enjoy Ps cooking the onions separately so your meat doesn’t get wet from the onions juice. Regards, Saigon Express

No need to cook rice this time:) Prawn and CHAR SIU CHOW MEIN MI XAO Recipe:... 3 tablespoon light soy sauce 3 tablespoon oyster sauce 1 teaspoon sugar 1 teaspoon dark soy sauce 1/2 tablespoon black pepper Mix all together and set aside 1 bag(1 lbs) chow mein 12 jumbo uncooked prawn (peeled and deveined) 2 cup cabbage strips 1 cup onion 2 tablespoon chopped garlic 1/2 cup green onion 1 tablespoon cooking oil 1 cup of sliced char siu(more if prefer) Put chow mein in hot boiling water. Boil for 4-5 minutes. Drain and let dry. 1In a pan or work add cooking oil and garlic. 2Sautés until garlic turn golden then add shrimp. 3Cook until shrimp is done. Add char siu , onion , cabbage and half of the sauce. 4Sautés for 2 minutes then add chow mein, green onion and the rest of the sauce. 5Cook for 2-4 minutes on high. Taste and adjust. 11.01.2022 Sharing another marinate recipe. Some of the ingredients in my all purpose marinate recipe might not be available in your area. The ingredients in this marinate can be found easier in coles or Woolworths supermarkets. SPICY LEMON GRASS PORK CHOP. Recipe: 6 pieces pork chop. About 2-3 lbs. Will also work with chicken or beef. You can double or triple the recipe. ... 1/4cup fish sauce (3 crabs brand) 1/4cup light soy sauce 1 tablespoon dark soy sauce 2 tablespoon minced garlic 1/4 cup chopped green onion (optional) 1/4 cup finely chopped lemon grass (more if prefer) 2 tablespoon cooking oil 2 tablespoon sugar 1 teaspoon msg (optional) 1 teaspoon ground pepper 1 tablespoon garlic chili Mix well until sugar dissolved. Meat is best when it is marinated overnight. You can pan fry, bbq grill, bake or air fry. Served with rice, broken rice or vermicelli noodle. Enjoy Ps, if pan fry, make sure you cook it with the lid add all the marinate with it for the first 6 minutes. Flip at 3 minutes. Then cook without the lid until done at medium to low heat. For all other methods: dip your meat in the marinate half way through cooking for that extra flavor. Please have a try and let saigon express know how you go. 06.01.2022 BEEF SHORT RIBS PANANG CURRY with green pumpkin, Japanese yam, bamboo shoots and sweet Thai basil Simple but delicious Recipe:... 2-3 lbs beef short ribs 2 regular can of chicken broth 5 cup water 1/4 cup panang curry paste(more if prefer) 2 tablespoon curry powder (to enhance the flavor more) 2 tablespoon annatto oil (fried seed and oil to get the color. Then remove the seeds) optional you can just use plain cooking oil. 1 onion (cut) 2 tablespoon chopped garlic fresh basil leaves 1 small can of slice bamboo ( wash and rinse with hot water) 1 cup of pineapple chunks 2 lbs green pumpkin (peel and cut into big chunks) 1 lbs Japanese yam(peel and cut into big chunk) 1 -500ml coconut cream 1-2 oz rock sugar (Saigon - Vietnamese curry is a bit more sweet) 1 tablespoon fish sauce (3 crabs brand) 1 tablespoon salt (less salt if you’re planing on using more curry paste) How to cook: 1 In a pan add oil, garlic, onion, curry paste and powder. Fried for a couple of minutes. 2 Add meat and half a cup of water. 3 Sauté until meat lock in all the flavor(3-5 minutes) 4 In a pot add water and chicken broth. Bring to a boil. 5 Add sautéed meat and all the rest of the ingredients except coconut cream and basil . 6 Bring to a boil then low to simmer about 10 minutes or until pumpkin are soft. 7 Add coconut cream. Bring to a low simmer. Taste and adjust. Turn off. You don’t want to over cook the coconut cream. Add sweet Thai basil and enjoy with some steam rice Ps, if you decide to use other cut of beef, you might want to simmer the meat longer for tenderness before adding in the rest of the ingredients in the pot.
