25.01.2022 Some of our residents enjoyed a fabulous day out at Stringybark Winery in the Chittering Valley on Monday. Organised by the residents' social committee members, they took a tour through the Chittering Valley and enjoyed a wine tasting and a roast lunch at Stringybark followed by a stopover at the famous Mondo Nougat and Morish Nuts factory on the way home.

18.01.2022 It’s time to retire the traditional Sunday roast with this twist on the original family favourite. Time until ready? Only one hour. Preheat oven to 220C/200C fan-forced. Line a baking tray with baking paper and roast whatever vegetables you like. Meanwhile, heat olive oil in a frying pan over medium-high heat. Add two pork fillets and cook, turning, for five minutes or until browned on all sides. Remove pan from heat and coat pork in l/4 cup mango chutney. ... When the vegetables are 15 minutes away from being cooked, add pork to the oven. Drizzle pork with chutney from the pan and bake until the vegetables are tender and the pork is cooked through. Meanwhile, place some Greek-style yoghurt in a serving bowl and season with salt and pepper. Swirl through some more chutney. Slice pork and serve with vegetables and yoghurt. 07.01.2022 YUM - this deliciously creamy recipe only takes an hour to make! Give this red lentil, sweet potato and coconut soup a go this week: Peel and cut 750g sweet potatoes and 2 red onions into chunks. Place them on a roasting tray and sprinkle with cumin seeds, ground coriander, salt and pepper and a drizzle of olive oil. Roast in the oven at 180C for 40-45minutes, or until cooked and golden. Peel and finely slice 4 cloves of garlic and finely slice 1 chilli. Cut the stalks ...off half a bunch of fresh coriander and put the leaves aside for later. Place a large saucepan over a medium-low heat and pour in a lug of oil. Saut the garlic, chilli and coriander stalks for a minute, until lightly golden. Add 125g red lentils to the pan. Stir to coat, then pour in 1-litre stock and 1 tin of coconut milk. Turn up the heat, gently bring it to the boil, then let it come to a simmer. Cook the lentils for 20 minutes, or until they are completely broken down. When the veggies are ready, remove from the oven and spoon into the pan. Add most of the coriander leaves, then blitz the soup with a stick blender until its creamy but still has a little texture. Squeeze in some lemon juice to taste. Serve the soup topped with the remaining herbs, toasted coconut shavings and coconut cream. See more
