24.01.2022 Ocho turns this many candles next April! We kinda snoozed on brewing anniversary beers for our first 4 years, so to make up for that we're planning an absolute doozy for the big 5. It will be brewed next week, but needs a long rest before we let it out to party.

15.01.2022 Surprise! Just when you thought we'd forgotten about this year's Summer Seasonal IPA... here it is Actually it's kind of a long story. We'd decided not to put the Summer Seasonal IPA into cans this year - essentially because by the time we were ready to, it was already late summer! Instead we brewed it as a keg only release, and got on with making the Autumn Seasonal IPA instead.... But then the COVID-19 pandemic shut down all the bars, and our distributor was left with the last few kegs and nowhere to sell them! So we thought: why not bring it out as a very late Summer Seasonal?! Silver linings, and all that. 09.01.2022 This week we put down our biggest and most challenging brew yet - a frankly ludicrous English style Barleywine modelled loosely on the exemplar of the style: Thomas Hardy's Ale. Simple ingredients and a simple process... except for the near five-hour boil we employed to concentrate and caramelise the wort. You can see the results of that process here, with a sample pulled every half hour. With an original gravity of 1.110 (26 Plato), it's going to take some time to finish fe...rmentation (for which we used our favourite English yeast: West Yorkshire 1469), before we rack it into barrels to rest for a couple of months. We're expecting an alcohol content of around 11-12%. A decadent beer to celebrate 5 years of Ocho!

06.01.2022 Introducing the all-new Winter Seasonal IPA It's a hazy IPA, brewed to have a big tropical fruit aroma (we're getting mango, melon and mandarin) and a lush, pillowy texture in the mouth. Purple is sure to be a crowd pleaser, but we are really proud of this IPA from a brewer's perspective too: we approached "brewing a hazy" with some trepidation (ie. don't stuff it up!), but also knowing that we wanted to brew our own interpretation of this style (namely: drier - not too fla...bby; efficient use of hops). Suffice to say that we'll be stocking this in our fridge at home for as long as we can! Canning this week, and we will announce an official release date once we're happy with its condition. More info about the beer: malts= pale malt, oat malt, flaked barley, flaked wheat, wheat malt, acidulated. adjuncts= nope hops= Citra, Ella, HORT4337, Eureka (total 10g/L) yeast= English Ale OG= 1.060 IBUs= 34 ABV= 6.5%
