24.01.2022 Bean and Corn Quesadillas Recipe 1 pkt Old Time Bakery Multigrain Wraps 1 onion, diced 300g black beans or red kidney beans, drained and rinsed... 300g corn, drained and rinsed 2 tbs tomato paste 2 cups grated cheese, tasty, cheddar, mozzarella or combination 2 tbs extra virgin olive oil Quesadillas Spice Mix: 1 tsp dried oregano tsp cumin tsp paprika tsp cayenne pepper tsp sea salt tsp pepper Make the bean filling: Heat the oil in a pan and add the onion, beans and corn. Cook for 3 minutes. Then add the tomato paste, followed by the spice mix and combine well. Cook for a further 2 minutes. Take off the heat and set aside. Place wraps on a bench and add on one half some of the cheese, of the bean filling and then top with a little more cheese (the double cheese is added to ensure the bean filling stays together acting like a ‘glue’). Next fold over the other half and place into a large frying pan (do not add any oil) and press down. Place a small dinner plate over the top to hold it in place whilst you make the second quesadilla to add to the same pan. Once both quesadillas are in the frying pan keep the small plate on top to hold them down and cover with a lid. Over a high heat cook for 2-3 minutes before flipping over to cook for a further 3 minutes. Place onto chopping board, allow to cool for a minute before cutting in half and serve immediately. 18.01.2022 We had some much needed baking therapy over the weekend and are so excited to bring you the recipe for these crunchy and wholesome Choc Chip Breadcrumb Cookies using our Bread Crumbs! Ingredients 100g Old Time Bakery bread crumbs 150g flour of your choice ... 1/2 tsp baking soda 100g butter, cubed and slightly softened 90g coconut sugar 1 egg 1/2 tsp vanilla extract 3/4 cup chocolate chips Method Preheat oven 170 degrees bake. Place the breadcrumbs, flour and baking powder into a large mixing bowl and stir to combine. Add the butter and rub it into the flour with your finger tips. Add the sugar, vanilla and egg and stir to combine. Fold through the chocolate chips. Using a tablespoon, scoop a tablespoon of cookie dough into your hands and roll into a ball. Place on a lined baking tray and press down slightly with a fork for an old fashioned and wholesome looking cookie. Bake 12 minutes or until golden and crunchy. Allow cookies to cool on the tray for 5 minutes before carefully placing them onto a wire rack to cool completely.

03.01.2022 Introducing the cake that you wish you had with your coffee this morning Meet our newest favourite: Pear Crumble Cake using our famous Bread Crumbs. All you need: 10 tablespoons melted butter 1 cup Old Time Bakery Bread Crumbs... 2 teaspoons cinnamon 2 teaspoons baking powder 4 tablespoons flour of your choice 1/4 cup almond flour or almond meal 1/2 teaspoon salt 3 eggs 3/4 cup white sugar 3/4 cup coconut sugar 1 teaspoon vanilla extract 2 tablespoons coconut yoghurt or natural unflavoured yoghurt 2 large pears, peeled and diced into small cubes Method Preheat oven 200 degrees bake Line or grease a small to medium springform pan Scatter some breadcrumbs into the pan to coat the sides and the base In a small mixing bowl, whisk the cinnamon, baking powder, flours and salt. Add the eggs and sugars into a medium mixing bowl and using an electric beater, beat for a few minutes until pale and fluffy. Add the melted butter and coconut yoghurt. Now fold in the flour mixture using a large spoon or a spatula, until just combined. Add the breadcrumbs and the diced pear and continue to fold through, being mindful not to over mix. Bake for 60 - 80 minutes or until a knife is removed clean. Let the cake rest for 10 minutes before removing the ring. Transfer the cake to a wire rack by flipping it upside down onto a plate, and then onto the rack. Store the cake in the fridge in an airtight container. Sprinkle with extra bread crumbs when ready to serve.
