21.01.2022 Love Olio Bello Pasta? Every morning, our talented chef team gets to work to continue the great 'Olio Bello tradition' of hand-made pasta. Sometimes, in fact, It's so popular, that it becomes the star of the show! We were thrilled to be a part of a creative 'behind the scenes' film shoot recently capturing the process and farm & look forward to sharing it soon. Well done Jessie - on best supporting role! 18.01.2022 It's only early Spring and already, our olive trees have started displaying spectacular spring flowering buds (inflorescences) across the farm. Depending on the variety, each tree can produce around half a million inflorescences (with clusters up to 20-30 flowers which is pretty impressive we think! Interestingly, however, only approx 1-2% of these will mature into olives. Here is the Leccino grove 'showing off' early morning- ain't nature grandissimo!
