This coffee has undergone extensive fermentation in a controlled, oxygen-free environment. With tasting notes of yellow peach, white grape and jasmine, this coffee is part of Project Origins Amber category of their special carbonic maceration selection, the CM Selections. Gilberto Baraona was not only a pioneer in El Salvadorian coffee, but a wonderful friend to Project Origin and ONA Coffee for many years. This special reserve filter has been created by our team to honour his memory, and is comprised of three of his Carbonic Maceration (CM) lots: Indigo 476 (40%), Amber 435 (30%) and Indigo 479 (30%). For our Roasters Selections origin blends this month, weve prepared two variations of the same blend of coffees from Guji, Ethiopia. For espresso, weve used 60% washed and 40% natural heirloom varietals to get notes of yellow peach, milk chocolate note and raw sugar; for filter, weve used the same coffees but changed the ratios, with 80% natural and 20% washed to highlight ripe stone fruit, blueberry and mulled wine notes with a grape-like acidity. 19.01.2022 GUATEMALAN FILTER Among the first coffee we have purchased from Guatemala, this washed pacamara from El Socorro farm is grown by Juan Diego de la Cerda, a third generation coffee producer who has operated the farm since 1999. Coffee has been grown at the farm since 1980, and with Juans efforts there are now more than 125 hectares of planted coffee trees. This filter coffee has a wide range of tasting notes - look for aromas of green apple and caramel, as well as a hazelnut-like note and a persimmon quality on the finish. Our founder Sasa Sestic World Barista Champion 2015 travelled to Ecuador last year and was blown away by a variety of auction lots and the work of many Ecuadorian producers. This geisha lot is grown by Manuel Romero in Chaguarpamba, Loja. His farm, Indera placed first and second (respectively) in the 2018 and 2019 Best of Loja competition and as a result, has worked on further developing and refining his cultivation and processing skills Notes of apple, pear and citrus peel are accompanied by a white tea quality, with white florals in the aroma and finish. 12.01.2022 Arnulfo Tradio Orozco has been growing coffee since he was 17 years old, working as a picker so he could learn everything he could about coffee cultivation. He has been producing coffee himself for more than 35 years, growing this mixed lot of Castillo and Colombia varietals in the Cauca region of Colombia. He picks the cherries when they are bright purple (Castillo) and orange (Colombia), before undertaking traditional pulping, dry fermentation and parabolic drying This espresso lot is aptly named, having a delicious citrus quality that develops as it cools.
