Hugh’s session might just be your chance!

24.01.2022 We’ve always got new coffees adding to our menu. This week is a CM selection diamond profile. In this process the coffee is fermented for the first few days as whole cherries in tanks that have been flushed with carbon dioxide. After this they are removed from the tanks, washed, pulped and dried slowly on African beds. The magic happens in the initial whole cherry fermentation. The Naturally high glutamic acidity present in Kenyan coffees reacts well to CM Processing and is what makes this coffee so creamy whilst retaining classic washed Kenyan traits.

24.01.2022 We are still committed to our #giveupthecup campaign, with more developments over the coming months. In the meantime though, we’ve been taking a good hard look at all our current systems to learn more about where we can eliminate single use items, re-use and minimise waste. 05.01.2022 On this day 3 years ago, @onacoffee Head Trainer @hugh_t_kelly had just been announced as a finalist for the 2017 World Barista Championship in Seoul, having served the first ever Whole Cherry Carbonic Washed coffee from @finca_deborah and the top scoring espresso in both the heats and semi-final rounds. We are so lucky to be able to announce that Hugh will be serving this EXACT espresso as the first course in the next ONA Sydney Experience Session on December 12th. This coff...ee was roasted, sealed and frozen just over 3 years ago, and according to Hugh tastes just like it did in Seoul. In addition to this extremely rare lot, the second course will feature a special espresso from this years harvest of @finca_deborah. For the final course Hugh will build a unique WBC style signature drink; a skill he has refined over his 9 years of barista competitions.
