25.01.2022 I was having a chat with a 7 year old the other day, and he asked, "What's your favourite meat?" My answer was obviously "Bacon." "And what's your favourite of all food?" He asked as if my favourite meat wasn't going to be a contender.... "Er... bacon." I answered calmly. There was a slight skewing of the face as he dug deep for another. "What's your favourite colour then?" "Bacon." I dead-panned. "It can't be!!" The boy yelled. Without even looking up I explained."Of course it can. The walls of this house are cream, just like the cream from a cow so why couldn't bacon be a colour?" The boy guffawed, "That's ridiculous. What's your favourite fruit?" He continued, not sure whether bacon was really a colour. "Baconberry." I kinda snorted this time and the game was up. But seriously, what if I told you there was a magical food that's key players include succulent pork belly, minced pork shoulder and rashers of bacon. If you've got these ingredients from your own farm raised pork, I'm sure you could try your hand at an elegant and very simple terrine. Common flavours that often accompany a terrine are duck or chicken, orange, cranberries and the best ones let you crack open that brandy. Any excuse on a cool evening Have you made terrine? If this rain would hurry up and actually doing something, we could snuggle up and enjoy a lovely pork belly with super crispy crackling and a zesty apple sauce Fine, don't rain then... I'm still doing the pork belly! Ok, so what I reckon is if we could all go and hang some washing out... then "forget" to bring it in, she should absolutely pour down... whadya reckon? ... Have a great weekend everyone and if you haven't already, donate to our farmers. Actually, the Stanthorpe Showgrounds Markets, this Sunday 26th August, have collections of non-perishable food items, toiletries and wet/dry dog food for those working dogs. If you're going past, check it out a bring something along for them.

19.01.2022 It's not getting super cold, but the days are kind of not warming up so by 5 or 6, it's starting to feel like casserole o'clock. Something I never would have though to make is pig in a pumpkin... and the only reason I looked it up is stumbling across this photo of Charlotte, devouring this award winning pumpkin after the Stanthorpe Show. We're not taking credit for this recipe in anyway... but will definitely be trying it. The recipe is care of Chef John of the Food Wishe...s Blog. 1.5-2kg of home raised (if possible) pork shoulder 1 Tbsp salt 2 tsp ground pepper 1/4 tsp cayenne 1/2 tsp thyme 1 tsp crushed fennel seeds 1 Tbsp rosemary 1/3 cup shallots 2 Tbsp flour 1 Tbsp olive oil 1 Queensland Blue or Kent pumpkin 2 cups of cider < alcoholic of course See comments for the method

14.01.2022 Belted Galloway. Neville arrived at the start of the drought, and produced some lean beef. This rib fillet was surprisingly tender, juicy and taste amazing... I guess the key is in the cooking. With the cool weather we have here, you can take your steaks out early. Bring them to room temperature and cook rare for the best flavour and texture combination.

06.01.2022 What could possibly be in a $2 burger that you'd want to eat? The cheesy cheeseburger (from some place) is tiny, but packs a killer 1/4 to 1/3 of your daily recommended everything. If you're lucky enough to have some space for an animal or two, rasing your own protein is a great way to save on the grocery bills be a bit more connected to where your food comes from. You get to see, and be a part of that animals life. Talking to people that eat their own animals for the first ...time, there is a common theme that comes through. An emotion that at first feels like sadness, but is more like a thankfulness. A respect for the animal that you just wouldn't feel except from raising your own. Not everyone can do it though, we get that. But even if you've just got a suburban lot, chooks could be a great way to start. With a simple feed regime plus scraps (just check up on what not to feed then), you can raise some lovely birds for the table. Plus you get fetiliser for the veggies. Here on the Granite Belt you've got access to all sorts of meat chooks plus a wealth of knowledge. There'd be at least a couple of people in every street I reckon that could show you what you need to know. Think about it... Why don't you tell us what animals you've got in your yard.

06.01.2022 With all the recent rain many of us will see that green grass poking through, in some cases whole fields will transform into lush shaggy carpets of yummy cattle food. I remember seeing a post about this recently, but couldn't find it, so I'll summarise here, the general gist. Cattle are greedy grass guzzling machines, and will most definitely gorge on fresh grass if it's available. Bloat issues can be a real problem, and can kill in extreme cases. Fill 'em on the dry st...uff before considering giving them access to thick green pasture. Seriously though, December is a very busy time of year plus school's out ... and it really is a great time for family. We truly hope you had a lovely Christmas and Happy New Year. Yes it's 2019 and it's time to start planning our menu for Christmas ok, ok... too soon. How about Australia Day? Let's leave the debate aside and focus on the menu.
